So, very early in act 1 I had merril at 100 percent friendship, and after finishing all of act companion quests for her, we bumped uglies. Now right after that, her armor changed from the foresty elvhen armor to some pure white chainmail armor. Are there any correlation between the two?

Yes.
It's caused be either the romance, or full friendship or rivalry. Not sure which, but the latter tends to go with the former.
