Where do I find this thing? The description says you don't tend to stumble upon these things, but there isn't anyone I can speak with about it on Sundermount, any chest I have left unopened, nor have I found any cave I can enter beyond the one with the golem merchant and the passage to the mountain graveyard. I suspect it's beyond that unmarked cave entrance I can't enter, but how do I proceed?

You 're allowed into the cave while doing a quest for Merrill.

Ah.... is that quest triggered by following the main plot further? Because I have no quests open except the main plot and this one, and Merrill is at +90% friendship....

It might be, I don't recall what triggers it. Any quest that moves you to the next section of the game will give you plenty of warning. You could try moving the plot ahead.

I can enter the cave, but theres nothing inside except a "Nexus Golem" vendor, i can buy armor/weapons from him, but he doesnt advance the quest.

And also the name of the construct i need is "Varterrals, im guessing the quest is bugged.

Wrong cave! You run into the Varterral, as the others have said, during a personal quest for Merrill.
