How can I tell if I have all of the items for an item set and how can I tell what their bonuses are?

Open the abilities tab. There you can see, which bonus is granted. (In the bottom right corner)
Every Set consists of a chestplate, boots, a helmet and gauntlets.

In your ability screen at the bottom right corner (of your main) you will see and icon of of your bonus if you have the set complete. Took me till Act3 to realize it. LOL

Every class has a set per act, such as Armor of the Fallen and the Champion Armors

Thus far I've seen:
Mage: Spiral Eye, Unhallowed (I think that was the name, it's the act 2 set)
Rogue: Last Descent
And, of course, the Champion set for both. You pick up the set pieces doing the "Main Plot" quests IIRC, so you're pretty well guaranteed to get all 4 of them. Personally, I would have liked a little more variety in this area, but at least they all are fairly unique in appearance.

It seems that usually item sets are complete sets, from head to toe (at least all of them that I have found).
I've also found this nice little site that has some good items, as well as lists some of the sets (they are unlisted as sets, but it has listed some of the pieces of the sets)

a piece as you begin Act 3
a piece from High Dragon at Mine Massacre
a piece from Huon from the quest On The Loose
a piece from Grace from the quest Best Served Cold
To see what benefits a complete set is giving you, look under your abilities tab, bottom right corner (usually) at the little Mabari Warhound. If you have the full set, there should also be a little armor icon of the same color. Click on this. Once moused over, it will tell you all the benefits your set is giving you for having completed the set.
