I already defeated the Arishock and became the Champion, I spent 30 hours of game.... but still no trace of Fenris in my game. Is it all right? Is he going to appear later?

I don't believe you can recruit him at this point. You had to do the quest "Bait and Switch" back in Act 1, which you get from a letter at home.

I only left one quest in my game, the one about Sketch and the assassins, only that one...

I would assume he'll never appear if you haven't gotten him yet. He "appears" in the beginning of your stay in Kirkwall. Like...even before you get Anders if you really wanted to.

You must not have checked your letters at home often enough in Act 1.

Fenris's appearance comes pretty hard out of left field, so I could actually see someone accidentally missing it.

Ya i actually denied working for Anso cuz I wanted to cut my ties with the mercenary group an theyre the one who tole me to talk to Anso. I went to Anso and denied his quest and then was gonna go to the deep roads but got rivaly points from Varric for denying the quest, i then reloaded a save, did it and theres Fenris, considered myself very lucky that I love Varric and didnt want him hurt.

Yeah, I wouldn't deny any quests unless you want to skip content. If you're doing that, I'd grab the guide and at least know what it is you're skipping.

After you speak with Varric for the first time in the Hanged Man you will receive a letter at "home". This will give you the "Bait and Switch" quest. That is Fenris' introduction quest, if you will.
