Hello everyone!

I've had reached the end of act II yesterday, and after considering the situation, I've decided that I have to duell the Arishok.
Here is the setup and the rules:
-I'm a  17  warrior,  using two handed weapons, berserker specialization almost maxed, spent one point on reaver and I also have purchased the stamina boosters from battlemaster. 296 hp 185 stamina 79 dps as for the basic stats.
-Hard difficulty.

Now, the extra rules:
-No doggy. It's not a duel when you use your dog. Well it could be, but still that's just an extra bonus ability.
-No potions, bombs and if I wait long enough for the posion to wear off, then no posions. Since Diablo II, whoever uses potions in a duell is cheating. So I won't use any.

Annoyances:
-The Arishok's attacks aren't really in synch with their effects. I mean, I've made a screenshot where the boss's ability hits me, while he hits the air, ~90 degrees from me, while there's a pillar between us.
-As a mighty warrior I can't dodge or parry with style, or at least with honor, I have to run around like little red riding hood.

The Result:
-I can dodge most of his attacks, but not the sweeping strike, moving when you see the incoming strike won't help most of the time (tried stay put, move to the side of the axe, and the sword as well).
-He can hardly be killed this way -and in my situation, there's hardly other way-.
-I might try to load the game before the final event, and get more stats and skill, to get up to devour on the reaver tree, so I can replenish healt from time to time without cheating (potions).

Conclusion:
-Next time pretty please, devise the duells to be duells and not "I've brought 20 potions, all I have to do is run around 'till the cooldown wears off." battles, thank you.

Update:
I've figured out, how to evade almost all of his attacks.
The one exeption is the impale attack, which seems to be a spell, so it cannot be evaded. This is my demise thought. And it seems, that out quanari opponent doesn't share my concept of a fair duell.
He uses potions.

He eventually stops using potions. If you have a medium amount of potions and you learn to evade his attacks you will just have to slog it out for a long time.

You can evade the impale attack by jousting him around the pillars.

Yeah, but you use potions as well...I use the circle step mechanism myself as well... I guess If I had spent a few points more on the reaver talent tree, I might could pull this off without potions. But with the Arishok using three, I'll use my two as well.
The main problem is in the impale.

I actually used the mabari combined with the pillar technique a few times and allowed it to steal aggro from me. When the Arishok was on the mabari I went in with Mark of Death and stabbed away.

Oh I also used those grenades you can buy in the undercity that stuns the Arishok quite nicely.

Im not going to refilm to match the criteria that the OP set, the fight is just too long. But technically you can win this fight without using potions or your dog by doing what I did and just not getting hit. Circle strafe and hit, silence him right before he uses a potion, then pillar joust him (so he cant impale you) until he dies. Its possible to win with no potions at all, and the dog doesnt help at all. On nightmare I kill my dog with friendly fire instantly.

Blood Mage + Spirit Healer. +100 Health regen, unlimited casting. Potions are unnecessary.

Despair + Shackling Hex + Dessicate + Winter's Blast + Deep Freeze = Permanent Arishok shutdown.

A stroll in the park really, and anyone can do it. In fact I actually felt sorry for the Arishok when I dumped so many Despairs on him.

Or maybe you can you a Shadow/Assassin Rogue with Decoy. Decoy is better than Dog. Then you can Assassinate and Twin Fangs and Backstab the crap out of him.

Never tried this myself though. The easiest way is still the single target CC Mage. No Warrior can be optimal as they are geared towards AOE melee, which doesn't help you much in duels.

Yeah, seems like no one reads throught what I've wrote...I'm a warrior, and I've already got the tactics worked out (didn't tested the pillar-impale trick thought, but if the Arishok can hit me through a pillar while facing the other way, I don't think he will think twice to impale me regardless of how many pillars I stack on him). But I idn't intended to use potions, bombs, pets, posions -so a true warrior vs warrior duell- but the Arishok uses potions, and I've decided to go back and explore the world a little more before taking on the final quest in act2. My main problem is now the forbidden knowledge side quest. I've found one book accidentaly, and red it (because that's what books for, and I'm ain't scared of some paper), so I could not destroy it afterwards (which makes no sense at all). So I've searched for it, sadly spoiled the locations of the remaining books for myself (still had a good time to find them), but also realising that I can't complete the quest.
Books.
All my problems (more or less likely in real life as well) are related to books.

Sigh.. this fight makes me so mad. Tring to duel him on my 2h warrior is infuriating. On no fight have I even considered dropping difficulty until now, and when I see how bloody EASY mages have it, it pisses me off.

The Arishok is weak to cold/nature dmg, and is able to be glyphed, frozen, mind blasted and petrified.
