What can you do after you get the champion's armor??
Like what quests or places can you do or go to??

Depends on how early you get it (obviously). I think the helm is set to a main quest, but other than that I think you can do quite a bit of Act 3 with at least partial Champion's armor. But only Act 3.

I don't understand the question. What CAN'T you do after you get the champions armor? Its not like once you receive the armor you can't do quests anymore.

Uh...most of Act 3, save for the Mine Massacre, Best Served Cold and whichever quest has you hunting those three escaped mages, seeing as those get you the armor. It's not like some secret questline opens up.

I got everything except the breastplate.

Just fight the high dragon in the bone pit and you'll get the warplate. And no, there is no specific quest for having the armor.

Should be 32.  I believe armor requirements for all classes caps out at 32 of their respective stats.

Coz I saw on other posts that once you complete the armor...
you CAN'T do that much in the game already.

They probably meant that you get it fairly late and that there's a limited amount of content you can do while wearing the Champion's armor simply because it's very late game. But it doesn't impose any kind of weird restrictions or anything, it's just armor that you get...really late.

For Mages the Skill req is 31 on Magic and Willpower.
