Let's just say you wanted bethany, but wanted to be a mage, couldn't you start off as a warrior and after reaching the main city use "Runscript chargen mage xx"

you could, but the dialogue would bug later on where normally carver would speak, you will still hear his voice, but he wont be there etc...
