Anders causes the mage and templar fight by blowing up the chantry so my quest is can i not recruit him or skip this companion quest and it never happens?

The one where you distract the chantry lady.

Nope. He does it anyway. It's a choice that you can never avoid.

On my second play through I refused to distract the grand cleric. First playthrough I knew he was up to something and kinda wanted to see what, but on my second play through, I drew the line there since he wouldn't tell me his plan. All in all, wasn't suprised when it still happened because I helped him gather the ingredients, but he probably does this even if you never help him

When I realized he had lied about the potion I refused to do the rest of his quest and it ended. Oddly, even though I was never that close to him in terms of influence, he continued to be available which I thought was an odd turn of events.

After he blew up the Chantry I killed him. And finished the game with a warrior main, Fenris, Aveline, and Isabela. Worked out pretty well, actually, despite having no mage. Since I sided with the Templars I expected Merril, who was mostly down the rival path, to do something but she never did. Which I also thought was odd.

I suspected that Anders was up to no good but my character is a trusting soul when it comes to her friends and believed him a good man in the end. Then... well we saw what happens at the end.

WOW!

WHOA!

He...betrayed... me.

All those quests, support, and friendship sacrificed in a bloom of fire, innocent blood, and madness.

I almost always take the highroad when I play a Bioware game the first time but this... no, he could NEVER be at my side again nor could I let him go elsewhere to let his desire to see his goals blossom to fruition take more innocent lives.

So, I took the only choice left. I never thought I would have chosen that... but I did. Because of what he did.

*sigh*

Overall, DA2 was too depressing. Finding out the First Enchanter's secrets really bowled me over as well as the hand he thus had in one of the game's darkest moments. There was never a good side it seemed, just shades of black.
