One of the things I've noticed is that after the first couple of missions Miranda and Jacob seem to clam up whenever I want to talk. Is this normal or did I say something wrong in the earlier conversations, like calling Miranda cocky?

No. You're just experiencing Mass Effect 2. They have so few conversations that you'll spend much of the game with them unwilling to talk to you.
Don't get me wrong. ME2 is a good game. I love playing it. But one of my complaints about it is that it's light on the squadmate interaction department.
I feel like ME1 had better and more substantive conversations with squad members, and I am hoping that Bioware returns to that style with ME3. The difference is especially noticable with love interests. Compared with how they were handled in ME1, I feel like we really don't get to know them that well.
