Who do you use in your party to walk around and do quests because one of my favorite parts of the game is walking around with your party and listening to their banter. I always always used Varric, Isabela and Merrill. I loved how all three of them talked to one another. I loved how Isabela and Varric called Merrill kitten and daisy (respectively). It really felt like they were developing their own friendship and relationships with each other as well as my Hawke.

Same as you OP. Varric, Merrill and Isabela. I used a sword and board, male warrior Hawke for what it's worth.
I did mix it up with Fenris and Anders a bit, but they were my main team much for the reasons you stated. In fact they have pretty much shot up to the top of my favourite BioWare characters of all time list after only one playthrough.

Varric, Isabela, and Merrill do deliver some of the best banter--I tried rolling with them as much as possible. I rolled as a Male Hawke 2h Warrior. Sometimes I'd sub a rogue out for Fenris, though I prefer my original three.
I really don't have much desire to roll with the others, which presents something of a problem in terms of party composition as it relates to combat effectiveness since I want to play a DW Rogue for my next full playthrough.

For the first two acts, Varric, Merrill, and Aveline. For the last 3/4s of Act 3, I used Anders instead of Varric. Probably a horrendous idea, since I brought him along to Merrill's relationship quest.
One of his lines made me want to beat the living hell out of him.
On my mage, I use Carver, Varric, and Anders. Pretty neat-o, but I'm only in Act 1 with her.
My other parties aren't noteworthy, as their basically the same as the previous two...
Wonder if getting a MageHawke, Anders, Merrill, and Fenris party together would cause mass-slaughter when a certain emo elf snaps....
Or when a certain bearded mage gets fed up with said emo elf...
And snaps even harder.

Varric, Aveline, and Bethany for a lot of the first part of the game. But I usually switch out the party quite regularly between quests to hear the banter that gets triggered, since that's always fun to listen to. That, and I make sure to go home every so often to see if I can trigger a new amusing scene with the dog.

I tend to have Varric (for comedy brilliance (and unpicking locks and schtuff)), a tank like Fenris, and then any other. I'm usually a mage, so I'd either go with another melee like Isabela or Aveline. But sometimes, I bring out Anders when I can. Or Merrill.
But always Varric and Fenris. But I tend to have Carver for the first Act.

Fenris, Anders, Varric. Seriously... this party as more angst and drama then a pre-teen let alone a teen.
And Varric is the "kid," who pushes all the right buttons.

I also favor Varric, Isabela, and Merrill. I like Merrill a ton though. Her naive reaction to many events is pure hilarity.
