What we've seen so far in ME1&2
Humans- Male/Female
Quarians- Male/Female
Hanar- Jellyfish
Batarians- Male
Vorcha- Male
Krogans- Male/Female
Salarians- Male
Turian- Male
Female Krogan? Not just between the sheets? Where?!
There's a dead one in Mordin's loyalty mission and when you're going to speak with the shaman, right across from him theres a krogan you can talk to. The dialogue is a few sentences and within it, the krogan reveals her gender.
I knew about the one in the lab, but not in the bombed out building with Gatatog. Gotta look that up.

Is it exploitative to take advantage of a completely innocent person, ignorant of the world who has no control of their own destiny, for a plot device? To derive pleasure from killing them mercilessly?
That and so many more questions. Children are a very taboo thing, in all of media. The only time I've really seen children used, and relevant in a game (unlike say Fallout 3), where your interactions can be very relevant. I can only think of two western series where this happens, one in Fallout 1 and 2, the other being the Bioshock 1 and 2. I've played a fair amount of Japanese games, and even there generally the closest they normally get is the teenage years, the coming-of-age. Its not an easy topic to cover, and this is one of those "Ask yourself as a society..." cliches, because its a true cliche. Children are still fairly taboo in books and movies, theatre, etc, but generally only where there is conflict. Since the majority of videogames are about violent conflict, moreso than other mediums, its fitting there are less children present.

Besides the potential controversy, I just hate children. They're annoying and I don't want any annoying the savior of the galaxy!

Actually, it would be more realistic to have kids running around. Even a place like Omega, not in a bar like Afterlife, but there should be some kids running around the residential corridors maybe kicking a soccer ball around or something. And surely on Citadel there would be some kids with their parents on their way to other planets, etc.
You meaan the place where a Plauge was just cured, and a young woman was murdered? With Vorcha Running around Omega is no place for children, its barely fit for adults.

I'd rather just see some female salarians, female krogan, and some female turians that aren't of the hideous comic variety.

Yeah, even Alistair's "Damien" cousin in DAO was like nails on a chalkboard to me. There's no way to inject kids, especially in Mass Effect, keep them relevant and keep that portion of the story engaging.
Oh, and they are annoying... So annoying.

Children generally are completely absent videogames for lots of reasons. One, as stated before, is practicality. The others have to deal with just the human condition. If you were a parent, could you gun down a zombie girl?
