is there any way i could use bethany's armor model and swap it with a robe i can buy in game?

There's a mod somewhere around here that unlocks the companions' armor slots so you can equip all of them with whatever you'd like.

Yes but why would you? It's got zombie hands...Anyway, the model is cth_beta and cth_betb, I fogot which one is the busty one though.

I would recommend using GFF for swapping the models.
Here you can find a .zip with pictures of the different armors in the game with their respective tags, making searching for the robe you want to replace easier.
The tag for bethany's outfit is cth_beta for the normal one, and cth_betb for the busty one.
A thing to keep in mind: her outfit only works well when replacing robes due to the meshes. I have tried, for instance, to replace the champion armor with it and it gives a lot of clipping issues with the boots and hands.
