On nightmare difficulty

Do things get harder as you progress? So far at the beginning, things seem a bit the same as normal/hard except things hit harder (and darn spell immunities, how can a weak merc be immune to cold...).

Will enemies start to get obscene amounts of health? Are they going to develop immense resistance to elements/physical and will they be immune to crown control?

Only certain bosses are immune to CC. Most enemies do have imunities as you mentioned. Qunari are immune to lightning and resistant to fire for example. The health of enemies do not go up, but their numbers do. And since CC timers are reduced on nightmare, having a commander buffing the trash. 2 rogues running wild backstabbing and enemy archers knocking everybody back. Challange does increase.

Ah CC time reduction. I see. That explains the being frozen for only 1.5 sec.
Enemy HP doesn't go up? So same mob hp from hard to nightmare? Do their resistances go up so I do less damage?

Oh, my bad. I thought you asked if the HP of the enemies increased from the nightmare content you had already played at. I wouldn't know to be honest. I went straight into nightmare and haven't tried the other settings. I would assume so. Or the ratio of elite -> trash is probably higher on nightmare. But yeah damage resistance is increased across the board for sure.
