I just pickpocketed a crossbow from a guy in Lothering, but I was under the impression items that large weren't stealable. Can someone shed some light on this?

normally you shouldn't be able to - as the standard steal loot table is set to minor items - but well for that particular merchant the stealable item is set manually

No really, if you wonder about size and realism, you must take into account that a merchant is not a warrior, he would not have the crossbow equiped, so you must have stolen from his supplies. The question to be asked is why is the crossbow the only thing you can steal.

You steal a sword right from a scabbard in a quest, so it's not unusual.

what he has it hanging on a strap on his back and you cut the straps off of it while he is distracted. not that hard to do.
