Preferably one that is NOT the Champion's Armor, but maybe something else high level. Please?

I appreciate the linky, but see, there's the issue again. I like the Champion's Armor and I'd rather it keep the model, but Bethany's outfit too would be rad.

Oh, I didn't know that was the Champion's armor... I thought it was a new item DX

Just need to change a single entry on item_variations.gda and you can use her model on whichever armor set you like. It should have them all listed, so you can pick the particular one you want to have changed.

item_variations.gda seems to be a reference file for the base models the different items use. It's not a listing of all the individual items in the game, but a listing of the models used by items in the game (other than the "default" ones). Changing the model used by something in there thus changes the appearance of any of the items that used the model which was replaced. Thus it's best to swap Bethy's body model for some more or less unique set of armor. For doing the same thing with Isabela's body mesh, I chose Ser Isaac's armor to replace, since I don't have the DS2 promo code and don't care to use it even knowing how to get it via the Vaddi/Vaddin mod.
Another suggestion, if replacing a set item, is to flat out remove the model being linked to by the line GD2A_COLUMN_7 for the boots and gloves that goes with it. It's not as big of a deal with Bethany's model, but with anything else there might be some bits showing through either way, which gets painful to look at after a little bit.
What I've done, personally, is switch out Ser Isaac's gear with the model for the companion I want to look like with my second run through with a class (curently Isabela for my second rogue play through, probably Bethany for my second mage play though, next), then used the save game editor to whip up evolving armor using the fake iconic armor abilities as a base and swapped the ECString line which sets its appearance to that of Ser Isaac's stuff. Shows up with the icons and names for Ser Isaac's stuff, but has the abilities I've given to it and not what Isaac's gear normally has. This is b/c I haven't really tried to divine how to edit individual items like some seem to have already, so what I do is more or less a workaround.

scyli, i love you,
in item_variations.gda you can NOT replace individual items, for example, you notice how some robes have the same skin but are two different items? that's because it's a type of robe such as "Robe A, B, C, D" without the toolset, you can't modify individual items.
