Hello. I'd like to change 2 things to the Human Noble Origin so hopefully someone can help me out. First, Id like to change the Cousland Family Blade to a 2 hand greatsword and possibly change the stats on it so I can use it thorughout the game (atleast until I get Starfang). Id also like to change the weapons my character shows up with in the opening cutscene from a 1 hander and shield to a 2 hand greatsword.
Im not the greatest with the toolset but I do know a few things. If someone could direct me towards a tutorial and give me a quick explanation on how to do either of these things that would be great! Thank you in advance.

The easiest way I can think of is to change the resource file itself and export it in the single player module.
But the easiest way isn't always the best way. For a better way make addin module for the single player and change the resource there.
It might be a lot of hassle for just one item but if you want to change other aspects of the single player you can do so inside the same addin module and if you don't want to use the changes any more you can just deactivate the mod inside the game without searching the override directories for single edited files.
Have a look at the the wiki if you haven't yet.

Regarding the opening cutscene, you can change the default starting equipment.
In your add-in, duplicate the creature default_hm_noble (in _core_creatures > _DO NOT TOUCH), changing the Folder, Module and Owner Module to your module.
Edit the creature's inventory, then export.
In background.xls, there are two 2DA tables which refer to default_hm_noble. Change both references to your new resource name, generate the GDA files and add them to your add-in's module override folder.
Alternatively, you can change the name of your exported resource to default_hm_noble, but if you do a lot of modding, you will find that shortcuts like that make more work in the long run.
