is it a bug that does not enable us to complete the quest if we take the book instead of destroying it? or is it just the gameplay?

Not to be a jerk, just semantics... the quest can only be completed by destroying the -first five- books. You do -not- have to destroy the Grimoire; in fact, you should choose to read it to receive the max benefits.
Oh, and the fight after reading the Grimoire is a good one!

Then IMO the quest should complete as "failed" if you don't destroy all the books because you read one.
