Like when Varric asks Aveline to buy the Hanged Man, or when Merrill is chatting with Isabella at the bar. I heard there's one with Varric and Izzy playing cards as well.
Is there a list of those?
And do you need to have both characters in your party for them to trigger?
And are they act-specific?
Questions about those companion scenes

Theres one where Isabella is talking to fenris in his home and one where she is at Anders' clinic (Both right after the deep roads).
I was alone when I went to both locations so don't think it has anything to do with whos with you. However I was "with" Isabella at the time (though The Varric/aveline scene plays everytime if you revisit after making her captain)

It does matter somewhat who is in your party when you trigger those scenes. After the Deep Roads, if you go to Ander's Clinic without Isabela in the party, Isabela will be there for 'treatment'. If Isabela is in your party when you visit Ander's Clinic, the Senechal will be there. Anders will give him advice not to fool around with pirate women, because you never know where they dock. The Senechal gives an embarrassed acknowledgment to Hawke and avoids Isabela when he walks out - lol.

I know that if Isabela is not in your game in Act 3, Varric and Aveline will be the ones trying to convince Fenris to move out of his mansion. If Isabela is still there, it will be her scene instead.
