Is there a way to look at how their points are now other than take them off the Normandy two at a time?
I want to respec all my characters before Arrival/ME 3...

If you have the Lair of the Shadow Broker DLC, you can respec them all at the Shadow Broker base after completing the mission.
Otherwise you'll have to use a save editor in order to respec.

I have the DLC, but I haven't played with those characters in a while and don't know how I built them when I was playing. I can't figure out how to look at their builds other than leaving the ship two at a time.

On the team status screen, you should be able to get a clue of what builds you used for them according to the final evolutions of their powers.

Your squadmates don't have to be on SB's ship for you to respec them.

Also your not taking any squadmates in Arrival so you don't really have to worry about their builds.

Go to the Shadow Broker's ship. Land. There's a Terminal on the far left.
True, you can't see what they're currently setup as, but that's not really an issue. Eezo is easy to find, otherwise it's like 1000 units for each respec. Just respec them all the way you want them right now. You'll likely not even notice the 12k eezo units it will cost in total.
Otherwise, if you've just got to know, then yeah, you'll have to pull a reverse noah and take them off the ship two by two.
