Sometimes npcs say how they're surprised an elf is helping out, or they think I'm a servant.
Leliana royaly messesed up her words in one conversation. But she apologized.
Besides if it was too constant, it would get annoying or you would be very inclined to let everyone die to the blight.

You have to remember that most of these people are waiting for Death By Darkspawn. They'd be happy to see anyone with a sword or bow. The Elf thing takes them off-guard, but not all humans suddenly become apologetic. Some are adamant that I'm an idiot and probably a thief.
It also works backwards somewhat. Being a Dalish Grey Warden is sometimes seen by other Dalish as basically a PR stunt to get the Dalish to agree to help. They all congratulate me for helping to spread Dalish points of view, but should I actually show them this, they seem surprised that I'm still Dalish and not been 'corrupted' by the Shemlen.

With these things you really do have to consider that you're character is either known to be a Grey Warden, a superb warrior of legend, or alternatively a seasoned, well armed human/elf/dwarf, few people are going to try and offend someone like that.

Bah now you are just saying that you can't be evil as a grey warden, which is not true at all.
You can be evil, kill people, practice blood magic, and do anything as long as at the end of the day you fight darkspawn and end the blight. That is what makes you are still a warden, and there are many examples in the lore of this.
I think it is pretty obvious that if they had the choice, time, and money they would have customized every bit of the world to each origin story including more racial tentions and such. But it was not possible, so they only customized the starting area and some bits here and there, which I understand, even if I hoped for more.
Lets put it on our wishlist for dragon age 2 then?

The game does actually react to my race a lot more often than I thought they would, all the way from Orzimmar, to Denerim, to Redcliffe and Circle Tower.

Remember, in this game, elves have been freed as well. So we can compare the humans and elves to whites and blacks very easily. So your argument is invalid.
Elves are free and now that he became a grey warden, all the more easier to insult all the humans in there.

This game is way dumbed down to what 'could' be done.

i would say look at the witcher for racial tensions in a fantasy setting. I really felt as if the elves and dwarves were oppressed --you can take their side but then you alienate yourself from the humans

affects the way the whole world interacts with you and character immersion is nr 1. I would have expected nobles to bully me around alot more. Evil-neutral-good is not character immersion.
I was so much hoping that this would finally be an RPG equal to the classics.
so the developers should have made a "lie" and 'Persuade" and "intimidate" and whatever other options for dialogue, so we have 50 different options to what should be a yes or no question. while were at that, lets make 500 different finishing move combos and 800 more random abilities/spells.
Honestly, can you **** about anything more? the reason dialogue options aren't so varied at some points is because they dont need to be. what would you rather have: great combat and story or more dialogue options? its a pretty easy decision.
and if youre referring to BG 1 and 2, this game already beats them on all levels. its going to be a classic in 10 years aswell..

basically no matter what you do/say, everything moves tot he same ending anyways.
It's kinda like watching a movie that allows you to pick dialogue sections but your choices only add a bit of "spice" to the meal since the edning has already been shot and is in the can.
