Sarcastic / Charming Hawke after combat: "I love it when a plan works out" = A-Team's Hannibal "I love it when a plan comes together"
Varric, during combat: "How many you got Hawke?" = Gimli & Legolas orc count in LotR.
I'm sure there's more... help me out here!

Ser Emeric saying he's too old for this reminded me of the Danny Glover line from the Lethal Weapon movies. And of course Isabella's famous "I like big boats, and I cannot lie"

Varric says that the protagonist of his novel is getting to old for this **** and wants to quit. Another Danny Glover reference

Ha! Nice ones!
Just thought of another one: The ring "Three Wolf Boon". If I remember correctly there's a thread around here somewhere with a pic of it.

Sandal says something like ' ....there was something in the woodshed', which is 'I think' a reference to the 'Divine comedy' a british band. They have a song about 'something in the woodshed'. I also loved sarcastic Hawke before going in to the Deep Roads, act 1, saying with disgust ' So we're adventurers now too?'.

I can't remember what Hawke says exactly but it's during the quest to find Fynriel after killing the slavers in Darktown, and picking up the note with the location in the Wounded Coast. She starts cracking jokes about the Wounded Coast location being near other places named after injuries and no one laughs. Was playing a mostly sarcastic female Hawke at the time.

"I saw something nasty in the woodshed." It's a quote from _Cold Comfort Farm_, a novel by Stella Gibbons (and later a film).

Varric (Referring to the Bone Pit) - "This place gives me the creeps. It's probably the name. They should call it the 'pie field.' Everyone loves pie!"
