Okay, so I've just spent my first 5 days with DAO restarting over and over because of reasons like "shoot, I wish my hairstyle was different; shoot, my chin/brow/eyes/jaw/nose aren't quite right; <insert facial part> should have been bigger, smaller, longer, shorter, wider.......
...it goes on and on.....
I've gotten almost obsessed with trying to create a portrait that looks exactly like me. I want it to be like looking in a mirror when I watch the cutscenes... a movie starring me!
My current profile photo is the closest I've gotten - it looks about like me 20 years ago (at age 24) - except my hair is dark brown instead of blond. (It's set to be viewed on stretch mode, not standard 4:3).
I could make it look more like my current age if I could add weight (double chin, anyone?) and salt-and-pepper the hair.
Bioware, if you're reading this, we need more hair customization and more age and weight customization. And how about more shades of brown hair? Right now, our only choices are black, red, redder, reddest, blonde, and white. A lot of us have BROWN hair, okay?
Is anyone else besides me getting into this?
By the way, good job Bioware. You've hooked me. I don't anticipate having a social life for about the next 6 months or so.

I wholeheartedly agree. There's too many shades of red.

What we need is...
WORKING
FREAKIN'
BEARDS!
Can I possibly use a beard without looking like my character hasn't had anything to eat for a week?!

Yeah, I've been obsessed with the character creator too, so you're not alone. There are a few problems I have noticed with it, as far as aesthetics.
Complexion: For male characters, it ranges from femine to weather-beaten; there's no in-between.
Tone: Ranges from white as a ghost to tanned; again, there isn't much of an in-between. This is especially noticeable when your character is outside, and looks ghost white unless you use the fourth tone setting, which is a dark tan.
Hair color: It would be nice to have a darker blonde, and a lighter brown. How many variations of red do we need? Really, there should be more light tan to brown hair colors.
Eyebrows: I wish the eyebrows were darker than the stubble. It's impossible to make a blonde character with visible eyebrows, especially if you want a character that is not ghost white. So, you can use brown for the eyebrows, but then the stubble is out, since it would be way off color.
Also, the way a character looks in the creator, and the way the character looks ingame is different. I notice that all of my characters tend to have unnaturally long faces, despite how the character looks in the creator.

Yea i know, its hard to make a christmas elf with so little options! I need more options for my "dark" elf too.

the long face irritates me. If the character were taller there would be no problem

Yeah for whatever reason what you get in the character creator is rarely even close to what ends up in the actual game. I don't know why but this creator seems like it's one of the more difficult ones to make a decent looking character, a serious lack of options and as some one said the beard issue though there is a way around the bug.

There's no real black hair colour. The darkest hair colour is a very dark brown. Although, I agree with the op, when it comes to character customization, the more the better

what i'd really like is that light stibble a couple of the preset chars (crewcut narrow face guy) have on the char i have at the moment as the stubble options on the slider are just too dark

How does one resolve the overly large head problem?

The best solution to shortening the face is to make the jaw higher and wider. In addition, you can widen the cheeks somewhat, to give the head a shortened look. Oddly enough, however, just to make a ridiculously "heroic" looking character, I had lengthened and widened the chin, and jaw to ridiculous levels, and it actually didn't look bad. It really is trial and error it seems.
