For ordinary people probably the distinction between king and prince-consort isn't that big. He's married to the queen so they think of him as king. Also initially Origins says there was a bit of power play between the two but after Awakening, Anora gives him a big welcome back. I had the feeling that he started to grow on her and so may be she even did make it official. My warden's, "bit on the side" was Zevran, so I can even take it that the reason Zevran was no longer there was that Anora made it a condition of him actually becoming king. It was disappointing, though, that you got less carry over from the King Cousland/Queen Anora end than King Alistair or even Warden Alistair. And if Loghain hadn't sacrified himself to the archdemon, which in my case he did, it would have been amusing to have him in the Vicount Keep and hear his take on the situation. Even better if he had actually disagreed with Meredith!
It makes a lot of sense. My guess on why you don't hear alot about the King and Queen in DA2 is that Ferelden is probably pretty stable under the two of them-increased trade , a rebuilt military, and no rebellions. I'm sure Orlais was probably pretty concerened on how things were developing in Ferelden, and they may have played a part in the disappearace of King Cousland. It's possible we find out in DA3 if it's in Orlais.
