Aveline made sure he couldn't do that.

He thanks you for the Grey Wardening later. He is much more reasonable than Bethany in that situation.

Carver attempts to join the guard: Aveline tells the guards not to take him.

Carver can't pick up an apprenticeship because the masters in Kirkwall aren't taking Fereldan apprentices

What's so bad about him joining the Templars? Bethany and Malcolm can't protest since they are dead, and he already tells his family he won't turn Hawke in (and he doesn't: Meredith only finds out during the Qunari invasion, after that, he's the Champion) Leandra doesn't approve, but that's it.

Being a Grey Warden was a choice outside of Carver's hands, which is the reason why he resented it (it was that or die). Once he comes to terms with it, he actually thanks you for it. Being a Grey Warden is not easy.

That's true, Bethany wants a normal life, and Carver wants to be part of something. He seems to become a better person when he joins the Wardens (which is more apparent at the end, when you picked a side). He does a complete 180, and even quotes the Warden mantra.

Bethany gets over her resentment at becoming a Warden as well. She forgave my Hawke and thanked her and is now helping her fight through the end of Act 3.

Carver actually seemed grateful right off the bat. He's glad to have a role of his own and the only thing he seemed pissed off about was that I was siding "with that ****" against my own people (played mage, sided with templars). Then he went on to say how he's glad he can make a difference as a Warden, blah blah. I really liked him once we were reunited.

What irks me about Carver is all the references you miss out on, as compared to when Bethany survives. She talks about the life you had before the Blight, she references the Amell Warden, she talks about how Leandra used to be.
Heck, it even shows in companion banter. With Bethany, I learned why Aveline and Wesley didn't have any children or how Varric feels about Orzammar.

With Carver, all I hear is "wheeeh, wheeeh, in your shadow! Wheeeeh, wheeeeh, can't be a guard! Wheeeeeeh, no one understands me!".

I like to think it's because he's a rival and not your friend, but just... You know. The constant moaning gets a little "FOR THE LOVE OF GOD, SHUT UP!"-ish after a while. The 180-turn in his behavior at the end barely (if at all) makes up for it.

Hardly. The letter you receive in Act II shows him moaning about how he doesn't have any glorious deeds to do, and how he still blames Hawke for everything ("In case you forgot it's your fault I'm stuck here." or something similar).

Don't get me wrong, I'd be pretty frustrated too, but blaming your fate on the sibling who risked everything while dragging you through the Deep Roads to find Grey Wardens and thus save your life, is the kind of behavior I expect from a thirteen year old.

He even gave me rivalry points for bedding a sexy elf wth Carver get a life.
Plus what 18 year old in a brothel is worrying about what his brother is doing?

You might want to re-read that letter: Carver's not upset because there are no glorious things to do, he's saying that the Warden life can be downright scary and it's nothing like the tales. So it's basically like taking a job at the CIA only finding out it's a desk job, just with darkspawn. I saw his "it's your fault this happened" akin to the line where Leandra blames you for Bethany's death, he's just frustrated and it makes him feel a bit better, it's not actually true.

Another point touched on was the lack of lore, but I find that's just part of the character: Carver (if he lives, so Hawke is a mage), has few, if any, friends (limited to a roll in the hay with Peaches), and can't do well at anything lest he bring attention to the three hiding apostates. In contrast to his character, who wants to achieve, he's going to hate it, and not care. Bethany was sheltered, everyone worked to keep her safe, and liked to go out and pretend to be normal since that's what she wanted. So she made friends easily.

Not likely for long. Aveline wouldn't even want him for his lack of respect and or ability to follow orders. She was an Officer in the ranks. If she even thought he had an ounce of professional soldier in his body? She'd have recruited him.

So no one needs hired muscle?
He could be a bodyguard or mercanary  He could work at the Rose.
He could give massages to aging noblewoman.
He could work for the smuggler elf or Merrin they would give him work.

Yep.

He's also got an annoyingly successful older sibling (who was a snarky, immature brother in my game, so that didn't help things) and has felt like a stupid outsider because of his lack of magic. I'm not entirely sure how people want him to act.

The drama is unavoidable.
