I think any let down option depends on the character whether you get rivalry or not. Anders is a sensitive guy, so it makes sense he would be hurt by being turned down. Isabela or Zevran are more detached, so they wouldn't be bothered being turned down. Merrill would go psycho with bottom dialog.
I completely understand that, and I would be understanding if I got rivalry with for example Anders even if there was a gentle diplmatic turndown option like I posted above.
I'd just like it if Hawke wasn't such a huge douchebag when he shuts him down, fine, give me some rivalry points; but don't give me a massive rivalry hit because my Hawke is a freakin' jackass and you don't give me the option to not have him be.

The "I don't want you thinking about me like that," happens to any Hawke, male, female, diplomatic, sarcastic or aggressive if you pick the top two diplomatic options in that conversation. The best I've been able to do is pick the two "sarcastic" options in the conversation-- I think it's something like, "Everyone likes to talk to me," and "Creepy." You come out of that with +5 Rivalry, and no flirting.
When I got backed into the "double flirt" corner, I ended up reloading and trying all the options with my sarcastic FemHawke.

I hate that too. It reminds me too much of what happened to me with Tali in my only ManShep runthrough-- I picked the "not healthy" option thinking it was a diplomatic rejection and ended up in relationship hell
FemHawke's delivery of the first line is actually kind of cute and funny. The follow-up is pure ick, and I hated picking it. And the "Don't think of me that way," was just awful. What happened to the, "Sorry, I've got my eyes on Fenris," option? Still, the follow-up was definitely a lot less douchy than "Don't think of me that way." *squick* I felt dirty when my Hawke spewed that out.

Made me wonder about the general consense of what makes an appropriate response in the BW universe. Like Merrill confessing love and you can only respond in kind or be a jerk. You, at least, had some middle ground in DA:O with Alistair. Maybe not I love you now, but the implication of feelings that get expressed later.
I don't want to lead Merrill on but it is hard for me to wrap my head around telling her she's a menace to society. I like her well enough, but we seriously disagree about consorting with demons. And my Hawke gets a little freaked out every time she considers what could be on the other side of that mirror. (I mean, I know about the mirror because my Warden was Dalish. My Hawke doesn't.)

I think it's a dialog wheel problem. I remember how nice it was to let Zevran down easy or Alistair. You had a couple of ways with Leliana also that still indicated you liked her as a friend.
Where's the, "I appreciate the thought, but I'm kind of involved" option like you had with Zev? Or the, "Well, I'll let you know what I think of you when you know what you think of me," thing like you had with Alistair? Then there was the, "You're a treasured friend, Leliana," that firmly set boundaries, but still let her know she was appreciated... Granted, you could be a major arse to all of them if you wanted to, but if you didn't, you had a real choice.
The voiced protagonist has a lot of problems, unfortunately.

I always just played it as the Karl thing didn't happen in ladyHawke's reality, but it's set up so you can view it however you want.
I've never had a problem with Merril showing up at Hawke's house, but I've never flirted with her in any of my games, and I haven't managed to get her rivalry/friendship maxed out either.

Perhaps - however, I've watched a playthrough where choosing only diplomatic or humorous options WITHOUT selecting any flirting options results in Merril being at the Hawke Estate. Similar how to being diplomatic or humorous without triggering a Justice-outburst with Anders in the beginning leads to the (infamous) Flirt/Flirt/Kick kitten dialog choices.Mary Kirby wrote...

You know...kinda like that gorgeous b!tch in school who put you down whenever she could, insulting you and making you hate her to the guts, but moment she drops her clothes you 'd jump at her.
