Damn wasp spiders in Merrill's act 2 quest.
The high dragon and the Ancient Rock Wraith were tough, but I've got the trick to them now. The high dragon is still pretty tough actually, but I take enough potions to make it not very difficult.

The High Dragon fight was very tough too - though I found it much easier on my second playtrough playing a dual wielding rogue assassin. INSANE damage dealing potential.

The Arishok fight was pretty tough the first time I tried it, but subsequently, using better tactics, it's not that difficult.
A good idea is to move your entire party to the right side corner of the level where you are when the battle begins - so that the enemy will have to run down the stairs to reach you. Get them nice and bunched up that way, and some will stay behind on the top platform.
Then target the Sarebaas first. It's also helpful if you've made sure that your party has high electricity resistance prior to the battle.

The High Dragon is difficult but I made it on my second try. And then do it again because I was not happy with massive potion consumption (only because I made the error to send Isabella constantly against him, while the DW rogue against bosses has to to use hit and run tactics). It's not difficult at all if you equip your whole party with fire protection runes and take the right position when the zergs attack
I duelled the Arishock with my mage and using gravity ring, cold spells and horror, I was able to beat him without many problems even if I have to run a lot (off course) and it does not feel epic at all

Mage? One spell, run away, stabbity stabbity DEAD. SIX TIMES. Ow, hands? Did I mention the hands?
Thief? Thief slaughtered the Arishok so fast and on the first go through that I was surprised and my nephew had remind me that the game was still going.

Second toughest is Xebeneck, on my first try I was able to kill Xeb but then got owned hard by waves of adds.
Both are very fun fights

No, not that guy, I remember Orsino going all blood mage crazy. It was in the city just before Merideth. He would glow red and blast this blue thing in an area that would pretty much paralyze you into that area to get whomped on.

You're talking about the Pride Demon. There's another one earlier on if you do one of Merrill's quests, so I already knew about his force cage attack and managed to avoid it. It was a pretty easy fight for me partly because I had done it already and partly because I was playing an awesome rogue who could do massive amounts of damage.
I'm not sure whether the hardest fight for me was the ARW or the high dragon. I was stuck with the resources I had with the ARW, whereas I could go home and get potions for the high dragon fight after trying it and failing. I'd probably say the high dragon was harder overall because the ARW was pretty easy after I figured out good tactics, while the high dragon was tough and took a lot of potions even after I figured it out. And Anders just wouldn't stay conscious through that fight.
