Normally the way to handle husks is some kind of area effect biotic powers that will lift them off the ground. Since that doesn't work as long as something has armor (and everything has at least some armor on hardcore and insanity) how do you deal with them?

Squad Cryo Ammo works real well on the Mattock for both Shepard as a soldier and the squad, and Infiltrators and Vanguards can also evolve the power to great effect against them.

I would recommend constant motion. Use area effect defense stripping powers like Incineration Blast and Area Reave. At level 30, even with 6/6 biotic damage upgrades, Samara's Area Reave will leave Husks with an invisible amount of armor, preventing biotic powers and similar effects from wiping them out in a single hit thereafter. Be aware of this and pepper them with a light spray of SMG fire to solve the problem.
Squad Cryo Ammo is a lifesaver too, as Praetor Shepard pointed out.

Slam can be a little more tedious and Reave more strenuous on cooldowns. I guess its a matter of preference. I usually bring Samara along and take Slam for myself.
Specifically on The derelict Reaper I go with Miranda and Samara. Incendiary on my self and Samara with Miranda in charge of Cryo + Warp bomb the Slams. Reave + Warp and incendiary makes short works of Scion as well. I bunker down to the left side right after entering the core room and have my squasmates cover straight ahead while i cover the stairs.
Horizon is a bit more chaotic for me , so i go for something more straight forward: Shoot them! And dodge the Scion attacks with charge or something else.
Oh yeah , and aim for the legs. I've been told its a weak spot and a lot more viable than going for the chest or head. Unless you have a flawless aim and can headshot all the time.

I either funneled them down a choke point while stripping them of their protections, or I ran massive circles around them while shooting them. Both followed by a singularity or whatever.

It has been said already. Keep moving, never let them corner you. Squad Cryo works well. If I have that on my character I don't really need anything else. If not I like to use powers like Incineration Blast or Area Reave to deal with the armor and then any kind of biotic to finish them off.

If you are playing an Adept then it is really easy. Drop a Heavy Singularity on the ground in front of you(5-10 feet out) put your squad behind it, they will strip the armor off husks, the husks will step into the singularity and die. Rinse and repeat as needed.
Grunt always makes a good guy to have on Husk missions, he can have the Matlock and has incendiary ammo, not to mention he CHARGES!!!! Mordin is supposed to be good with Incendiary blast with an area pull/throw to finish.
And yes, aim low, the legs can usually be blown off really quickly with shotguns or heavy pistols especially, but all guns work. I don't know if husks' heads actually give a bonus for being hit, I almost think they moved it low just because they could, because a groin shot will dump a husk a lot faster than headshot will.

shepard using area reave will completely strip a husks armor in one shot, samara's will leave a little armor left. but, later in the game, i had great success just reaving a group of husks followed by an area throw from samara. squad incendiary ammo also works well on high rate of fire weapon like the tempest in the hands of squaddies.

Besides the really good recommendations given above - My personal favorite is punching them in the face (as they run in) + shotgun to the groin, they lose those legs they die, armor or nay.

With adept/vanguard I shoot->pull->shoot->pull, but throw on abominations with adept.
Engineer - shoot->NS/Cryo blast. OR Incinerate->squad power.
Infiltrator - widow nutshots!

To deal with Husks:
-- Soldier use AR + Mattock / Revvy + Inferno ammo to strip armor. A teammates pull, push, slam, concussive blast, etc. will instakill the stipped husk.
-- Sentinel == Shotgun if you have it to 1 shot strip, Throw to kill
-- Vanguard == Charge spam ... just don't get caught in the middle of a bunch
-- Infiltrator / Engineer == Run or around or area incinerate / Teammate power for instakill
-- Adept == Run around a lot and hope for the best. Singularity should at least slow guys down

Done this a few ways, my Infiltrator uses incinerate to strip armour and the Shoots them in the groin area with the Phalanx.
My Soliders can vary a little depending on special weapon choice but the Mattock always features heavily.
I take Grunt and Mordin on Husk heavy missions, grunt uses a mattock and mordin a phalanx with squad cryo. I too will use squad cryo as the mattock does sufficient damage to armour and Mordin's Incinerate takes care of anything else. Under AR and with a tightly packed group I can take out 4-5 husks on a good day.
The important thing with any class it to keep moving and don't get cornered.

Ah, with my infiltrator I found it most helpful to shoot their legs. If you hit the same leg twice with a sniper rifle the husk is finished. That's better than shooting their heads. Also, they are very slow, you can storm right past them without being attacked, just don't get cornered. I didn't use incinerate much in the fights I got really swarmed with husks on insanity, I make excessive use of cloak... depends on the ammo supply of course.
Really the only thing husks are good at is moving straight forward. If you move just a bit out of their attack path you'll be fine.
With my (newly created, not imported) Adept on Hardcore I didn't have to do anything in particular - I just spooled off the usual program, took care that my team mates stayed close and defended one position. The simply weren't able to overrun an adept with both team mates alive.
Really the only thing husks are good at is moving straight forward. If you move just a bit out of their attack path you'll be fine.

Like Praetor Sheppard was saying, Squad Cryo + Guns will go a long way on their own vs. Husks. An double tap from the Mattock/Carnifex/Phalanx will usually do. Otherwise, spray'n'pray with SMGs / leg shots with shotguns + Powers in between will do the trick too.
If you happen to have a Revenant, I'd recommend Inferno for yourself and Cryo for the squad, if available. A short, frenzied spray from an Inferno Revvy into a pack of Husks is usually enough to strip their armor, much like an Incineration Blast would.

Also, the M-622 avalanche is useful. One shot takes down armor, another freezes husks. Husks don't like getting frozen.
My favorite is on Vanguard, though - Scimitar + cryo ammo. Charge in, run around blasting husks wildly, charge towards a distant one, repeat. It works amazing.

For adepts I actually like to bring mordin with me. Area incinerate does wonders vs armor. My standard collector group is Thane/Samara/miranda(warp bomb help) and Mordin for anti-armor husk clearing.(also does okay vs the collector heavies)

For the IFF mission, I always bring Mordin, no matter what class Shepard is. Not so much for his Incinerate, but for Cryo Blast, which when evolved to rank 4 its base cooldown is cut down to half, 4.5 seconds.

Dominate is an insta-kill for husks. Arc Projector works nice too. For vanguards heavy charge and shockwave. Cryo ammo works nicely. I've found the best, for all classes, is stasis. It has a smaller 'cooldown' time and if husks get too close, stasis, allows you to put some distance between you, then blow them to hell. Makes Horizon a cake walk. IFF mission, you can survive long enough to end that mission with the Cain.

With the Infiltrator I use the smg and Flashbang grenade and take Kasumi with me. Flashbang sometimes kills husks instantly, so if you take Kasumi with you, you have two Flashbang grenades at your disposal ;-)

Sentinels can kill husks every 3-4 seconds - when they are out of armor -throw insta kills and sentinels have warp and throw with maxed class skill it takes 2 seconds to recharge or something like that.

I went with stripping their armor with a burst from the Locust and using my level 2 Throw power to insta kill. Took Garrus with me for his area effect concussive shot, which helped a lot too and also wrecks the barriers of collector troops. Worked fine as long as I avoided getting cornered.
