Okay, I see a new opening on my inventory screen (like a wagon?) that I believe is supposed to indicate what trade goods I have, but it don't see it filling or anything, despite the fact that I have some "ore." How can I tell how much ore (or other goods) I have collected?

You left-click it and it opens another screen that looks like the "trade" screen.
It was bugged at one point, so make sure your game is fully patched or you'll have trade goods vanishing into the aether. They will be added to your inventory but you won't be able to access them. If you don't want to fully patch your game for some reason I believe there was a fan-made fix for just this one issue.
