 Does anyone know where to sign up for more quests from her?  After "Loose Ends", she makes the comment that her books are right here, and hawke can sign up if he/she wishes.  Where do I sign up?

I had her do the same thing, and I wondered about it. Cut I suppose to shove the game out the door.

Yeah I assumed those were side quests that never made it into the game. I like Athenril, so I just lie to her about the boy and go on my way.

I was pretty surprised that doesn't come back to bite you.  I can't help cringing when it's openly mentioned in a letter (that the kid has to have someone else write for him, no less).

I never understood what the story reason the Hawke siblings left their jobs was. Presumably they were getting paid, and being protected by from the Templars.

Meh, Athenril has to keep the Coterie of her back. I don't think she has time to read all your letters to see if you weren't lying

I doubt they were paid much at all. They were working off getting into kirkwall. Any money they had past that probably went to food. Basically what little they could steal for themselves. All the money from jobs likely went to Athenril. Hawke had to work a year to get into kirkwall which took supposedly a ton of coin. When you come out of it you're not rolling in coin nor do you have much in new gear.
