Forgot to mention for you mages. Your staff is very important for this, you'll be using it a ton. If you have a FIRE or LIGHTNING staff, get rid of it for this bloke. The resistance is obscene - depending on difficulty I think he's immune to both at some point. I'd recommend a frost staff - even if it's worse than what you have, it will be one hell of a lot better for this encounter.

Assassin/Sabotage rogue will make quick work of him. Fatiguing fog gives enough time to assassinate or twin fangs before he can counter. Miasmic flask and if he gets stunned, you can get in a backstab.
Shadow - decoy screws up his ai. He will kill the decoy, then just stand there attacking thin air. Hit him with your bow.
My Blood/Force mage had that ability to slow his movement and attack speed so kiting wasn't that bad.
Surprisingly, it's my warrior that had the hardest time. I removed pommel strike and could not resist his knockdowns. I had to circle him and hope that he didn't impale --> chain k/d me to death.

this was the hardest battle for me as a rogue. more difficult than dragon or wraith. kiting ftw in front of hundred people.making yourself a clown. such a shame. champion my a..

I killed him with a rogue build, no stealth just assasinate with dualist stuff. Run away until recharges, occasionally stabbing and running away.
Mage is quite easy if you just horror or petrify him, unleash damage spells as you can.

My first play through as a mage I didn't have many force powers so it was me running around using petrify/cold spells then dropping an AOE and kiting him around hoping he took damage from tempest or Firestorm. Took almost an hour. Almost quit playing the game all together. Sad part is Act 3 was the worst chapter of the game so the Arishok fight to me WAS the final battle. Meredith was easy.
My 2H Warrior had no troubles. Fight took around 5-7mins. Haven't tried it with a Rogue yet since I'm not as excited with how Archers turned out (she's stuck somewhere in Act 2 unplayed for a while now).

All my playthroughs are with rogues, and I've kited every time. Forget it being a less than honorable method of fighting, you're a ROGUE. If you wanted to stand toe to toe you'd have gone with a different profession. You beat him with guile over brute force.

Arishok is easy as a rogue, just need to be built properly. I highly advise going full duelist with some points in assassin along with subtlety and some sabotage; fighting him as shadow just trivializes the fight to the point of out right cheesing him to death. Specialist can be nice as it will reduce your chance of glancing blows but overall, duelist is your best bet. I also suggest using a bow over DW for effectiveness but it's up to you.
Duelist makes the fight much quicker; throw the gauntlet will drastically lower the Arishok's defenses allowing you to crit him every time you hit him.
Stealth will give you a nice breather to gain some distance on him if you're using a bow.
Evade has about a 50/50 chance to stun him and combustion grenades will always stun him.
Deathroot toxin is nice as you get an extra 12 dmg every time you hit him.
Fatiguing fog works well on him as it slows him down drastically allowing you to get a few hits in while he's approaching you.
Beating the Arishok as a rogue is all about slowing him down and bursting him while he's stunned. Getting the talent that lets you retain stealth after using an ability if you're concealed is also nice; the Arishok cannot detect you if you're stealthed allowing you to get more abilities off than usual.
EDIT: The hardest class to duel the Arishok with is definately the warrior.

Actually looking through some videos of other people's duels with the Arishok I don't see a single one where there isn't kiting involved, or worse exploiting the pillars to hit through them, regardless of class.

I'm getting close to this battle with my rogue and have been worrying. I beat him with my mage and warrior but am anticipating a harder time. These pointers will definitely help.

The key to beating the Arishok as a mage can be summed up in one word: Cold. Hit him with cold spells and use a staff that does cold damage. Oh, and be ready to run away a lot.

A mage should have no pressing need to run away. Cold spells will freeze the Arishok, grenades will stun him, and Petrify, Gravitic Ring, and Despair will lock him. In my Mage duel, I did almost as much running towards the Arishok as away - distance management is key, but it's not always to run away.
A Mage who only uses Cold, though... ...yeah, you're going to spend a LOT of time running. Either way, it's a boring fight.

First time i killed the Arishok in Nightmare was with a primal/elemental/force mage. As some have said, there is no need to kite him. All you need to do is interrupt his movement and dodge his attack.
I kept him check with petrify, winter's grasp and cone of cold. I would cast gravitic ring as one of the previous spells begin to wear off if the ring is available. I hit him with stone fist and fist of the maker for damage. I would auto-attack with my cold staff in between castings.
When all my spells were on cooldown and he runs after me, I found it is sometimes worse to turn and run from him. Sometimes you end up in a non-desirable position. For me, what worked was something similar to what Roxlimn mentioned in his post above. I basically "dodged" him.
As the Arishok begins to run towards me, it was better to run at him and veer off at an angle to either his left or his right, passing just at arms' length. The Arishok will stop as you pass him and attempts to hit you. His swing motions are very slow giving you ample time to stop and auto-attack with your staff or cast any spells available. I found running towards him and passing him decreased my total time running around and allowed me to beat the Arishok a lot quicker.
The run and pass works even when he does his bull charge. He only hit me with it once because I pressed the wrong key and mistimed it. He hit me with his sword in the belly attack once because he resisted a winter's grasp and I was too close to dodge him. He never hit me with any of his regular attacks. Only one health potion used (I kind of had a panic attack when he got me with the sword in the belly attack) through out the entire battle with no dog.
Not bad going through Nightmare for the first time not knowing what to expect using a squishy mage.
