So she's a Witch of the Wild and can transmogrophy into a High Dragon and practices ancient magic, not to mention has a daughter named Morrigan. Beyond that we (or at lest I) don't know much about her.
Such as...
Why does she have those Qunari horns? Was she originally a Qunari? How come Morrigan dosn't have those horns? Is Flemeth humanoid or Dragon? Did she have an affair with the Arishok? How does she sleep? Answer.

That was just her hair. Past that, lots of debating going on about gods or demons that joined with her. Theories basically. But her hair was made to kind of match her dragon horns.

Morrigan is not her blood daughter. When you speak to her in the mountain Flemeth says: she is not my children nor my enemy (something like that)
edit: Actually Hawke says on Morrigan : I am not sure whether she is your daugther or enemy. Flemeth to answer: Neither is she.

In the mountain she refers to Morrigan as her daughter and Hawke has an option to say: I can not decide if she is your daughter or your enemy. Flemeth laughs saying: neither can she. But why would she, I raised her to be like that.

Her hair looks like Dragon Horns. Maybe the whole thing about her becoming a Dragon not once but twice as the players see her in Dragon Age 2. She only becomes a Dragon once in Origins.
