A third option should have been included during the conclusion act:
KILL EVERYONE. Kill Anders, Kill Meredith and KILL Orisino and then dance in The Hanged Man and get drunk with Varric while war rages on outside between Templars and mages who don't have any leaders. The ending is then different because Hawke is drunk in The Hanged Man and Casandra finds him there.

Yes but I'm talking about just killing those three and allowing the Templars and Mages to fight each other without leadership afterwards. It would still lead to the chaos that the world is supposedly experiencing right now but it'll save treking all the way to the Gallows.

That's... exactly what happened. You're describing the game. Out of Kirkwall, none of the groups have a leader now.
TJPags' thrid option is the best. I was very tempted to do it a lot in Act 3.

Yeah, should be been more optiosn there, like: Fight both sides, stay out of it, fight both sides and protect the populace of Kirkwall from the worst burnt of their conflict...

Other posters have expressed wishes for the Eric Cartmen [screw you guys I'm goin' home] thing. Instead of taking sides your job now is to get as many nobles / families / innocents etc. out of the warzone while both sides are literally tearing the city apart. You're now REALLY the champion of the city ... all the critical events can still happen [maybe you have to kill both leaders??] ... etc.

Anders accidentlys the entire chantry
Hawke can murder knife him or send him on his way- but Anders can't remain at Hawke's side
Meredith wargbles
Orsino wargbles
Hawke flashes a peace sign and refuses to pick a side, pledges to protect the rest of the city
Orsino learns to how abominated, Hawke kills him
Meredith joins the Sith, Hawke kills her
And then Hawke was the viscount.
Or something along those lines.

Exactly the third choice I'd have liked! And it may more of a champion-ish thing to do instead of joining either extremist-side...

I guess... Abomination-Orsino could appear in the city, having fought past the templars and you must kill him to protect the citizens (Bethany or a fleeing mage explains that Orsino resorted to Blood magic). Then after Orsino is dealt with, Meredith appears and she wants to kill you because to her, everyone's either with her or against her...
