i mean everyone needs love now and then right? Varric has no interest in any female dwarfs within that 7 years? 

I do hope that one day I can matchmake my companions...

It is possible that they don't tell Varric about their private life or that Varric knows that Cassandra will not be interested in the private life of companions.
Aveline does get a new husband and Fenris and Izzy do some making out (all though it seems to be 'just for fun' kind of thing).

Aveline has Donnic
No male available for Merrill (Carver has some kinda crush on her but he has to leave). Anders hate her for blood magic, Varric sees her as a sister.
Anders is plain ugly no one wants to touch him. Also there is that dual personality situation, I guess normal people prefer to know who they are going to bed with.
Varric has Bianca. Top tier crossbow fetish FTW.

You mean like the Aveline quest? Varric and Isabela are players, Carver is a social reject, Bethany is a prude and the rest are asocial.

I gotta add, as Hawke I wouldn't even wait three years on ANYONE given a choice. If they don't want me now, I'M moving on.. (if I could) So yea, the companions should be having a little happy fun time too.

If not with Hawke, Isabela and Fenris have each other, Anders and Merrill are to busy working on their projects. Aveline has Donnic, Varric has Bianca, Sebastian is a choir boy. Carver is a frequent in the blooming rose and makes cautious moves to Merrill. Bethany propably has something going on in the circle. You know how the circle works (Anders in Awakening: Oh, you don't know the story behind the robes? You know how strict things are in the Circle, right? Of course you do. Well, the robes make quick trysts in the corner easy. No laces or buttons. You're done before the templars catch on.)
I think there is pretty much going on already. And we don't know every detail about our companions private lives.

Exactly, there are no female dwarves in DA2. How strange. Unless Bianca counts. I which case, there IS a female dwarf. Just trapped in the body of a crossbow.

Anyways, Varric's already found the love of his life in Bianca, Fenris and Isabela start a relationship, Anders' too preoccuppied with blowing up places o' worship and Merrill has her demon. And sort of Carver who fancies her, and Craver also has the Blooming Rose.

The Circle in Kirkwall is apparently less fun. Obviously, if Meredith had just let all the mages boink each other, things would have gone on very differently.

If they had the resources to do it sure... but I doubt they have an unlimited budget, so we're going to have to stick with "Varric doesn't think Cassandra is interested."

Also, I find it hard to believe that it took Hawke 3 years to bag Isabela. That's absurd. It's also absurd that romantic interests try to move in with you after one night... but I think I'm getting off topic...

This. Scads of male dwarves in Kirkwall, but not a single dwarven woman.

And Verric plainly states that he's a one-woman-man, and won't cheat on Bianca. So he's taken. Technically.

It wouldn't bother me if it didn't seem so out of character with the Fenris we know when Hawke sleeps with him. He's supposed to be the equivalent of a virgin. And apparently sex doesn't hurt when it's Isabela who does it..... 

I personally prefer the sexual tension between Isabela and Carver in their banters. "I'll show you!" I love Isabela, but I see her sleeping with anyone and everyone who isn't currently in a romance with Hawke (aside from Sebastian, of course).
