But the fact that she admits she's at fault made me find her character at least a little more sympathetic than she was before, tbh. I liked it.
She was still a bit of a b**** to him, but at least we know she wasn't entirely without remorse for it.
but nothing came of it, it killed a few minutes of screen time but we got no great insights into either person beyond Jon having been sick as a child and Catelyn not being totally heartless, one we already knew the other "meh"

A king is only as legitimate as his subjects make him. Since all the lord paramount accepted Robert's rule/bent the knee he was the rightful ruler of the Seven Kingdoms even if he usurped it from the Targaryens by force. After all for the most part the Targaryens got that title in the first place by force. Therefore due to Robert's children being illegitimate, Stannis was without a doubt the rightful heir to the throne.
Now with the Boltons in the North and Freys in the Riverlands all the LPs accept Joffrey/Tommen rule. Therefore their lineage does not matter. Baratheon or Lannister they are the rightful Kings of the Seven Kingdoms for now.
Robert was an acceptable ruler because he was part Targaryen, his grandmother was one, that's why he was made king.
Even the entire dynasty is descended from Orys Baratheon, the (rumored admittedly) half-brother of Aegon
So...how does everyone feel about the fact that, after this season, the show is going to be a spoiler for the books now?
I'm skeptical about the show writers winging it from a likely vague outline of the next books GRRM gave them. Also feel George should have been the one to tell this story himself.
Honestly, I feel like it can only improve. Most of what I dislike about Game of Thrones is a direct result of Books 4 and 5 feeling sub-par compared to the first 3. In my opinion, Martin's frustrations affected the writing. But I also think a lot of Game of Throne's material translates very well on screen.
I'm hoping that, with the directions of Seasons 5 and 6, the writers can fix this giant cluster-****.
I am not a book reader (I do read the book Wiki at times though) but I enjoyed Season 4 the most and I'm looking forward to Season 5. Same with my bf, I think.

Stannis Baratheon is the one true king of Westeros. The Iron Throne is his by right. Let all true men declare their loyalty.

No. The point is that you seem to be ignoring there is no 'by right' here. This is proving by the constant war and rebellion. Stannis will be king if he takes it by force just like everyone else. Just like the Targaryens did.

Stannis was next in line for succession after Robert (since Robert's children were illegitimate), so Renly had betrayed him and was attempting to usurp his rightful throne. Stannis is fully justified in having him assassinated. Renly had committed treason.
On a side note...Robb Stark, despite his tactical brilliance, is a strategic incompetent. Besides squandering a crucial alliance with the Freys just for a roll in the hay, Robb lost sight of what the war was really about when he allowed himself to be declared King in the North. He should have remained focused on avenging his father and destroying the Lannisters, and the best means to achieve that would have been to declare for Stannis. The North was never going to win the war on it's own, it doesn't have the manpower or the wealth for that.
The Battle of the Blackwater likely would have seen combined Stark, Tully, and Baratheon forces attacking King's Landing, and possibly Martell forces as well. No matter how clever a defense Tyrion/Tywin mounted they would have lost against those odds.
