I don't think Sansa will take on Jeyne Poole's role, partly because Sansa is still technically married and is also wanted for murder by the Queen... and partly because a role vaguely titled "Winterfell Worker" was cast with someone who looks suspiciously like Maisie Williams.

Well, sadly there's been no word about the Manderlys so I think they've been cut. Osha and Rickon were heading to Last Hearth at the end of Season 3 so there's even less reason to have them in the show since they could just bring back the Umbers instead.

I think its bloody stupid that the show will outpace the books. I think its stupider though that the show will "spoil" anything from the books once they reach the same point in the timeline and the show keeps going.
I'd rather the show go in a completely different direction than the books if that were to happen.

It's still very possible that Stoneheart will appear. I notice there have been no outright denials that she might, so it could still be in the cards. If so, it would probably happen towards the end of Season 5 at the earliest (and most opportune storywise). It'd be about the perfect time since Jaime and Brienne would likely be done, or nearly done with their arcs in Dorne and The Vale respectively, and if the showrunners ever plan on having them cross paths again then introducing Stoneheart is the way to do it.
I also think it'd be a huge missed opportunity on their part not to bring Stoneheart in, really. It'd be a shock for the ages to both those who've read the books and those who haven't and would honestly work much better for Jaime's and Brienne's storylines than just making up more things for them to do.
So... I really hadn't thought about it that in-depth before, but I'd say there's definitely still a decent chance Stoneheart will appear.

Still, wouldn't that basically be the biggest give away imaginable if she did?
I'm thinking something to the effect of Marillon Cotillard claiming that she wasn't playing Talia Al Ghul in the Dark Knight Rises, which she inevitably was.
I'm worried they might be axing her, but I don't think it would be to their credit to announce she's coming back regardless of their plans.

Berric is still alive on the show. And the ripple effects will just get bigger and bigger, depending on what Stoneheart does in the next books.
Not that they haven't screwed up things like that before, though. They did include the Tyscha bit in season 1 and just ditched it when Tyrion gave Tywin his payback.

Not necessarily. Having Melisandre meet with the Brotherhood and learn about resurrection from Thoros could factor into a huge moment from the books coming up (probably) at the end of Season 5.
