Mance betrayed the kingdom. He was a member of the Night's Watch and he deserted. He also rallied and army and attacked Westeros. That means he is a traitor.

 

Stannis doesn't even know about the Shadow Baby. He never saw it. all he knows is that Melisandre killed Renly (a traitor) with magic.

Stannis is king. Mance betrayed the realm by attacking it. Its not rocket science, you know. Did you miss the bit where the Night's Watch even sent letters to every lord and king in the realm, to HELP deal with Mance? Stannis was the only one who showed up.

Stannis comes off as cold, because he is the personification of Justice. The character is based on Forseti, the norse god of justice. His name even means Rock.
