Basically, I'm on a second run through DA2 and want to try and get maxed out friendships/rivalries ASAP for all the companions, so I did a search online for a guide to friendship/rivalry guides listed by each companion for each quest so I'd know who to take (yeah I'm lazy). What I found is that the info IS there (primarily on the DA2 wiki, and HUGE thanks to everyone who has contributed there) but it takes some putting together as it is scattered across many, many pages.
What I've done then (and I hope some peeps find this useful) is collated the info I could find and listed it here - initially for Act 1 - with potential friendship (listed as F+#) and rivalry (R-#) gains for each companion. I've chosen to do it alphabetically by quest and then by companion, with friendships listed above rivalries.
NOTE THAT ALL THIS INFO IS SECOND-HAND, I DON'T KNOW FOR CERTAIN HOW ACCURATE THIS IS. I also accept no credit for the hard work other people put into finding this info, I am just collating their efforts (thanks everyone!). However, if anyone spots errors or omissions please post here and I'll correct the list, and also let me know if this is useful enough for me to repeat the process for Acts 2 and 3 which I am perfectly happy to do if enough people want me to.

FENRIS R-(various): During personal conversations at his mansion, Fenris rewards pitying phrases like "I'm sorry" with Fenris: rivalry (+5), and harsh remarks like "Get over it" with Fenris: rivalry (+10).
MERRILL F+5 Visiting the Gallows with Fenris and Merrill in the party will initiate a dialogue amongst your party members. If Merrill is present, choose the "It is wrong to oppress Mages"
