I often find that, when fighting mages, if I don't notice the mage and disable it fast enough, one of my party is simply instantly dead. e.g. one battle in Hightown streets involving four mages at once. Try as I might, one of them nailed Varric before I could stop them all.
Hopefully a simple question: how can I find out what attack the mage used to do the damage? I don't even know what I'm defending against. And also, are there any standard strategies for this other than to incapacitate them as quickly as possible?

Templar Tree (warrior specialization) is your best friend:
Unlocking Tree: 10% damage to spellcaster and fade creatures
Holy Smite: Spirit damage (mages are weak against spirit)
Holy Smite Upgrade: 200% damage to spellcasters and fade creatures
Cleanse: People say it can take away the shield, also cleanses area's with aoe spells
Cleanse Upgrade: Silences
Silence: Single target silence (disables them from casting)
Righteous Strike: 10% chance to silence when you attack
Annulment: 50% magic resistance
Usually I just silence them, select my whole party, beat down on them, stun them after silence, beat down on them. If they cast an AoE spell, command your party to move out of it, or use cleanse on it. Elemental Aegis + Rally gives your whole party elemental resistance which will cut some damage off as well.
I had a warrior with annulment, and upgraded Elemental Aegis. I had 58 magic resistance, and about 90ish% in each element. I used to sit in blood mage pools like trololol.

Generic no name (circle) mages tend to just staff you, the ones you need to watch out for are blood mage, enchanters and sarabass.
There aren't much tricks except save your big hitters for them, if they are on cooldown, run away until they aren't.
Oh, and make sure you summon the dog, they hate the dog.

Jubez -- I have no problem causing them great damage and killing them quickly. But I often find one of my gang is dead faster than I can have one of my characters run up to the mage and whack it. Silence would be useful, except I'm not playing a warrior Hawke. Elemental Aegis + Rally I'll look into.

jxd: As you say, I'm not as worried about the ones that staff me. It's the others. Saving my big hitters doesn't help when the character dies within a few seconds of the opening of the battle. And yes, I always summon Freakadog, but it takes a few seconds for him to spring into action.
I still have the original question of: how do I determine what the attack was the killed someone? Is there color coding by damage type? Is there some attack type that they tend to use?

I never had any problem with mages. Just put them crushning prison or keep hithing them. They spells can be interupted, if you knock them down.

I don't think there is a way, there's no combat log that I can find, the best you can do is look at the damage number, yes they are color coded, orange is fire, purple (or is it pink) is spirit, green nature, etc. You just have to pause frequently and stay out of the fire I suppose.

Just keep track of new red dots on your mini-map, thats a new wave of reinforcements. When they come, hit pause and visually look through them all to make sure there's not a mage. If you are expecting a mage keep one of your favorite skills unused so its available to smash them.

Hi George -- that's definitely good advice, but sometimes it happens on the first wave too. jxd -- I'll try to look for the damage number, but I haven't seen floating numbers in the past, and I was wondering if they disappear once someone is dead.

I completely forgot that only warrior hawke could go into the templar tree. I've only made warrior hawke so it's like second nature to me XD

A mage can use dispel if they have barrier/buffs up and things like crushing prison/horror/sleep? can interrupt/CC I imagine, I'm not sure about any timely rogue interrupts.

As rogue Hawke I tended to roll with a warrior and a couple mages. Warrior staggers one, I vendetta it. Mage brittles another, I assassinate it. Mages keep other mages locked down as best they can otherwise (horror, petrification and crushing prison are your friends.)
Rogues and warriors can often lock them down fairly well with knockback as well.
There can be issues when they teleport somewhere really awkward, or things are on cooldown. I tend to save my lockdown and high dps abilities for mages and assassins, since I know there are multiple waves and I know those are (in most fights) the only real threats.
