Love the easygoing, sarcastic, charming personalities. Plus, from what I remember, they were all agreeable companions too, making them easy to work with as far as decisions go (Well, maybe not Alistair, but the other two). I love the Morrigan and Sten types too, but they disapprove so much it makes them difficult to keep their likes in your party.

Nope. Morrigan was cold & heartless but not really evil. I would of liked a companion like Kolgrim, a reaver. Before someone recommends Fenris, he still had a problem with magic and sided with the templars near the end. I want someone who's got no problem with demons, blood magic, and would rejoice at the sight of the chantry being blown away. Aggressive, psychotic, evil, loyal, patient, while another blood mage with these traits would be nice, I would rather see a reaver companion the next time around.
He will even tell you that it is time for him to move on from his past.
If he didn't stay that was your doing; not his. Moreover, if he was that against mages why would you be able to romance/recruit him if you are one?
Oh I did still have him side with the mages at the end as a non-romance, just still the fact I get rival points with him every time I support mage freedom, find its ok to dabble in blood magic, or deal with demons makes me hate him. On my DA2 "self" champion, while killing him would have been satisfying, it was even more so when I handed him back to his former master and then got that letter from Danarius.

The fact that she's not fond of him is the point. To see that whiny heir to the throne get blown up (well despite the body being intact, he's still dead) should make her happy. Personally, I want a two-handed warrior Tal-Vashoth. I want him to be sarcastic and funny (because I'm sick of serious Qunari), but also broody at times because he'd be a Bi-LI voiced by Raphael Sbarge (as all good Bioware romance options should be). He'd also be one-horned because that's cool, and there would be lots and lots of unicorn jokes.

Unicorn would also have a really hot, Bi-LI sister for the other half of the Bioware community. She'd probably be a saarebas and wear a mask all the time, like a DA Tali.

Female Dwarf (I'd love Dagna, but unfortunately she lacks the fighting ability. It's such a shame there weren't any female dwarves in DA2)

A family member who stays with you permanently.
And this one is really strecthing it... but I'd love Empress Celene as a companion. Perhaps she could disguise herself (ala Silk Fox) when out in public?

If they could pull it off that is a great idea.
Warden Alistair or Drunken Alistair I would love to have as a companion in DA 3. I made him King in my playthrough So I don't think he would back in anything other than a cameo.
Fenris, Nathaniel, Cullen are who I want to see as possible companions as well.

Finn from Witch Hunt. I know we only had brief interaction from him, but I liked him a lot. He was a kindly mage, timid but good for company.
So that's a rouge and a mage... I'd want Alistair to be my companion as he was one of my favourite companions, however he's unsuitable with my main run as he's king and so he's probablly a bit too busy to help me with side quests.
I guess I'd like another dwarf companion, throughout my run I've been trying to help them. A romanceable one would be good. And seeing as I've a rogue and a mage, a meat shield dwarf would be good. I'd ask for Sigrun but... I didin't do too well with her in Awakening due to completing it too quickly, so she went mumbling off to the deep roads. I guess she might be fun.
It all depends on who's the protagonist of DA3. If it's my Hawke, Sigrun might be good. Hawke's a meatshield. If it's someone new, I'd like to play a mage so a meat sheid would be necessary, perhaps my old friend Oghren or some new Dwarf companion. Humerous like the other two, likes to drink, serves as a foil to Varric... that'd be nice.
