I personally would go with a hurlock. They're easier to pass off as human and avoid notice in Thedas. If a talking darkspawn were to go running around in Thedas he'd have to make himself look unnoticable. I'm thinking human-sized hurloc dressed up in rags and looking like he's got some kinda sickness - maybe make him a rogue or warrior.
He could maybe have a few scenes where he pulls back his hood and rags and shows that hideous face, especially during interrogations. I think that'd be better than Fenris' "fisting" people at getting them to talk. It'd have to be the old school hurloc face though with some facepaint. I hated the new school look of hurlocs.

I know I want to see a female Tal'vashoth who was formerly Saarebas, due to the lack of Ketojan in DA2.
With Aveline's type of personality-tough, caring, logical. That I think would be very interesting.
One other which would be perfect for me would be one of the darkspawn disciples.
He would be simple minded, like Sten. A touch too confused with foreign cultures-also like Sten.
Perhaps this darkspawn would be sadistic with some degree of honour. A personality akin to Fenris's?
Apart from those, a human sized rhyming varterral is the only other perfect companion I can think of.

Besides him, I'd want a Fex companion. Who and what are they? If we ever get to see the light of Par Vollen, that is. From my understanding, they occupied the lands before the qunari and are rarely seen elsewhere.

After all the crazy mages that kept turning up in DA2, i would love to have a Mage companion in the next game with a practical view on it all.... With a good sense of humour to amuse me and a good heart that screams at him/her to do the right thing even when he/she knows he/she should run for the hills and save his/her own skin.
Also i'd like him/her to be mentally sound for once, maybe with a few emotional breakdown moments in conversations about some shady/unhappy past or whatever, to add some depth beyond HUMOURLOLZ.
Beyond that..... Cullen.

Edit: While we know its possible for a spirit (like justice or faith) to turn to a demon, I wonder if a demon could be sanctified and be forced into a good spirit? That'd be neat.
And Jethann. He said himself DA2 that he has many, many talents. ^_~ I picture him being a rogue, with a pechant for poisons and a sexy, fluid, dancing type fighting style. Mmm.
