Party composition?
Anyway;
Place your party around the edges, 1 near each set of stairs. Send summons ahead, use arrows of piercing, +2, acid, biting, etc. Make one of your party a target and use rings of fire protection, helm of defence and protection from fire buffs or a protection from magic scroll. Doom & malison him.

I just pounded him mercilessly last week, one and done, so I'm feeling confident I can help. LOL
First of all, this is one of those times where I don't feel guilty "loadin' up" before I go in. Since I've played a number of times I try not to "overly prepare" for a fight unless there is some reason that my character would have known. In this case, Claire let's you know he's behind the door.
My party was LG F, Lvl 8 w/+1 Morning Star; Minsc w/Spidersbane, Khalid w/2 +1 Bstd Sw, Jaheira w/+3 sling & spells, Imoen w/+2 Sh Bw, Dynahier w/+1 sling & spells.
Before we went in all my all the men and Jaheira quaffed potions of giant strenth and heroism. I think Imoen knocked down a potion of power. Then Jaheira Blessed us all and Dynahier Hasted us.
We went in and spread out so that one of my fighters was at the top of each staircase with his battle buddy - i.e. My fighter w/Imoen; Minsc/Dynahier; and Khalid/Jaheira.
When the DemonKnight hailed us we ripped him a new one as soon as the dialogue was done.
My fighter, Minsc and Khalid were on him instantly since they were hasted and they commenced to pound him with their giant strength and melee weapons.
Not sure exactly what was happening elsewhere b/c things happen so fast and I play my NPCs w/scripts about 90% of the time. Jaheira generally led w/summon insects and then started flinging +1 stones. I know Dynahier usually threw 2 Magic Missiles, Blindness and Chromatic Orb (she had two of each) and I remember seeing missiles smashing into him. During melee Imoen rained various magic arrows and she was true to form here.
Bottom line is he went down fast and hard and we were virtually unscathed.
The effective thing here was to get on him fast (Haste) with my front line guys and make sure they have some enhancements, spells, potions to increase their effectiveness. Since I use scripts my support troops (Imoen, Jaheira and Dynahier) do their own thing. As long as their follwing the script I have for them they do the damage I need them to do. Unless I look over and see them standing in the corner, yawning I focus on making sure my PC is doing his thing well and monitor the health of the team in case someone needs heeling or other action.

how can i protect from the fireball he keeps using, he cast it 3 times and its wiping my 2 front line fighters out, the fire resistance potion is no good

Helm of defense 20% fire resistance + 2 rings of fire resistance 40% each = 100% for one.
Protection from magic scroll should do the other.

I noticed a trend.
Summon monsters JUST before u see him.
Once combat starts, he WILL cast dispel magic then VERY HIGH DAMGE FIREBALLE
on the NEAREST party member (not on creatures).
get the person with the most fire resistance provided by items (not dispelled), then he will fireball. Then he engages combat with nearest enemy.
He should then use up his power word death spells on the creatures.
There is also a good thing too.
He's one of these enemies that lock onto a target and do not change to any nearer targets, so get him chasing a creature, and trap him between others.
Blitz him with 2h weapons and missile weapons/magic and he falls without any effort.

Yeah. I remembered after I sent my reply about his fireballs. Both my PC and Minsc had Rings of Protection from Fire so they were virtually unscathed. Khalid had some charcoal on 'em when we were thru but we nailed him so fast Khalid lived.

If you are playing vanilla, i.e. without Tutu or BGT, did you know that you can beat the demonknight at the top also. Cast protection from magic on him and he can't teleport away. 
Use ranged weapons on him. (With NO magical component) The throwing axe + 2 works fine. Have Xan with ring of fire protection as the melee component. The fireballs actually HEAL him if his protection from fire is over 100%.
Somebody trying to improve the game, made it so that you can't use that scroll against enemies. I think the change was detrimental.
The reward is some plate armour and a helm of opposite alignment. It's the only helm a druid can wear!!

I just pummeled him again. Second time in a row that I've gotten to him & finished him,
'one-and-done.'
If you play realistically (realistically meaning that if you wouldn't KNOW you're getting ready to meet a foe, then you DON'T buff for the fight before going in), this is one of the places where you KNOW going in that the bad guy is on the other side of the door because Clair warns you ahead of time.
I think I buffed my ftr, Ajantis & Rasaad (all 8th lvl) w/various Giant Strength Potions, Yeslick too but he was Ftr 7/Clr 7. He also cast Prot from Evil 10' and Chant.
We hit the door and spread out so that everyone had separation. Didn't attack the DK until he saw one of us. Then:
1) Neera cast Spell Thrust at him
Imoen Greater Malison
Yeslick cast Dispel Magic in his vicinity
Fighters held fast
2) Rasaad threw an Oil of Fiery Burning
Neera cast Magic Missile @ 9th lvl
Imoen attacked w/a Wand of Fireballs
***Here is where the DK blasted and killed Neera w/a Fireball & scorched Raasad taking him out of the fight
3) My Ftr, Ajantis & Yeslick then rushed the DK - all from a different angle
a. My Ftr, B/Axe +1 & 19 str & Gauntlets Wpns Exp
b. Ajantis 2HSword +3 & Gauntlets Weapon Exp
c. Yeslick Warhammer +2/+1 Elect & +2 Mace (2 Wpn Style) & Gauntlets Wpn Skill
d. Imoen attacked with Magic Missile and Melf's Acid Arrow @ 7th lvl
4) Demon Knight Died. Not sure he ever hit one of my fighters.

Done it with a solo fighter/thief. Oil of speed, plus potions of strength, invulnerabilty etc.
Hide, backstab, run away out of sight, Hide, backstab, Repeat as often as necessary.

Isn't it what any thief would do, or any guerrilla fighter. They don't fight fair because they are weaker than the enemy.
Bit like David versus Goliath. David used ranged weapons because Goliath would have smashed him flat if he got within range with his sword. Mind you, he had to be good with the sling as his ammo was VERY limited.
What's more, I like cheese. there's nothing better than a nice bit of Wensleydale eh Grommit?
