I've read some "rumours" on the forums that some of the companions get a secondary set of armor at a certain point, and that it is possible to switch between the two (like it is in ME2 when companions become loyal). Can anyone veerify this and if so, how do I switch armor look?

Rumor? Since when actual truths started to called as rumors.

Only LI change their armors after you start romance with them. Aveline upgrade to Guard outfit on first year. Isabela's romance outfit is bugged you need to use Maker's Sigh on her to get update.

No it ain't possible to swicth between two armors. They chage and live with that armors till the rest of their lives. After all everyone on kirkwall wear same cloths for 10 years...

You can also use console commands to switch between their armors at will. Just take control of the character you're changing and use 'runscript appearance #'

Isabela's are 1050 and 1051, Merrill's are 1060 and 1061. I'm not sure about the others, but I believe they're all on the wiki.
