My Shepard will continue his work as a spectre for many more years. He will retire a legend. Though his methods were harsh, sometimes excessively so, he believes the good that came as a result will vindicate him from the brutality he has exerrted, that the ends will justify the means. He will retire with honor with ashley. having lived his whole life in a shroud of violence and zealous service to higher cause for the first time he realizes there is no one left to fight, no enemys left to destroy, there is peace. Having never had a family of his own, he assimilates to life with ashley and her family. He is haunted byt the things he has seen and done, but he puts it behind him, and enjoys his somewhat simple life now with a few mini shepards.

Krystynne Shepard would found her own direct marketing and drop shipping company where her hard earned connections at merchants all over the galaxy can ensure that her new line of Reaperware™ plastic and microwave-safe medigel storage containers (green and bio-degradeable unlike that "other" brand) find a home in the cabinets of every alien and human in the galaxy.

Then she'll evade taxes on the proceeds, pay herself a 1 credit salary, organize a ponzi scheme to quadruple investment capital while paying no dividends, and spend that money on high end imported varren-skin bodysuits and coats, and customizing her brand new personal fleet of dreadnoughts, one of which she will fly to meet the council where she will cry bankruptcy and receive bailout funding.

Rinse. Repeat.

Years later, laden with guilt and friendless, having lost lovers due to her selfishness and paranoia, she puts her arc projector in her mouth. A movie and game series comes out, loosely based on her story -  'Crass Reject'.

My Shep would settle back on Earth, where she grew up on the streets, and start the effort to rebuild humanity's home planet (assuming the planet is still salvageable). After the process is well underway and Shepard and her crew are known as heroes galaxy wide (a few years), she'd pull away from the rebuilding and make a very public announcement of retirement from the Alliance military to live the quiet life that she's earned--hopefully on a small beachfront property with Kaidan somewhere. Shep would occasionally do some Spectre work for the Council--espionage, sabotage, sensitive data collection, the occasional merc clean-up--until she decided to raise a family of her own, and make up for the family she had never had.

Gosh, could you imagine Shepard as a parent? Eek.

He gets himself a house in Bekenstein for him and Liara as a "base", but they actually start travelling around the world galaxy.

Yeah, he likes exploring.

After that though, he is definitely going to stay on Bekenstein or Illium and spend the rest of his life with Liara.

In history, the men and women who died in the peak of their glory are the most known and admired, they are the ones who changed the world and wrote the history, they are remebered for their actions and not for who they were: Alexander the Great, Julius Caesar, Jeanne d'Arc, El Cid... all them were killed or sacrificed for what they believed, with their death they become far greater than they were alive, they become a symbol.

My Shepard is destined for greatness, if he had survived the reaper attack he would live a peaceful and happy existence, being praised and adored by all races and then he'd die of age, he would be remembered no doubt, an extrardinary man who defeated the reapers saving everybody and at the end died of age, but after all... a man, nothing more.

If he dies saving the galaxy and every organic life sacrificing himself against the reapers then he will have an eternal life in the memories of everyone, he will be a star that never fades, a friggin legend, he will be greater in the history books and thoughts than he ever was in his mortal life... an inmortal symbol of nobility for the human race and for life itself, when thousands of years had passed he will almost be praised as a god, a god of life that defeat death itself.
The end of my Shepard's mortal life against the reapers as a martyr will give birth to an inmortal life in history. And he will be more than a man, he will be a symbol of life and much more.

Kevin Shepard - Highly altruistic and public service-oriented, so possibly a seat on the Council.  Failing that, he'll retire and become a priest.  Either way, hopefully things will work out between him and Tali.

Trevor Shepard - Colonist/Sole Survivor background sucks.  He wants to retire somewhere far away from it all with Liara, the only person who makes him feel complete, and have kids.  Dang, that sounded sappy.  Oh well!

Alexander Shepard - Emperor of the galaxy.  He is named after Alexander the Great, after all, and he takes that a bit too much to heart.

Odysseus Shepard - Priesthood.  Only way he'll come to grips with all that's happened.
