So what DID Fenris think was in the chest?

He seemed quite interested in whatever it was, and depressed when you told him it was empty.

Maybe the contract of sale or something that would prove in Tevinter that he's a slave.
How would that matter?

So like, if he destroys it then even people in Tevinter would have to assume he's a free man, as there would be no proof that he's a slave. It's a symbolic gesture as well.
I was thinking of in China, historically people could sell themselves or even family members to brothels and rich people as servants. If they ever save up enough money to buy themselves back out, it's a very symbolic gesture to tear up the contract of sale that formally made them a slave.

Yeah, I have no clue either... but it seemed important, so why didn't they ever tell us?

Maybe Fenris collects them like Hawke.

He looked sad when he learned it was nothing, so I assumed it had something to do with his missing past, something that gave him hope somehow.

Erhm, what chest?
In his recriutment quest "Bait and Switch" you are told to loot a chest in a bandit hideout. Fenris will ask you if anything was in it, but it's empty if you open it.
