In short, at some places it seems clear that a certain companion is best, but otherwise...
Is it best to stick to 3 companions and leave the others at camp? Or should I mix and toss around just to have them all more or less evenly?
Also: my PC is a carbon copy of Alistair, Sword and Shield plus Templar. So I can just as well leave him at camp yes? Or is he central for the plot since he is Grey Warden?
I know of one place where having him makes lots of sense and another where he feels just wrong.
Will he "pop up" if I visit a place where he has a strong plot-line, or do I risk missing it if I left him at camp?
Companions: mix and change or stick to a few favorites?

See, I never really bring Alistair along with me anywhere barring the opening cutscene in Redcliffe. Mostly because every other spot where he's crucial to the quest, he's either automatically put into your squad, or he'll show up in the cut-scene anyway.
And though I know how easy it is to slip into a group of four that seems really efficient and well-rounded, just be sure to keep allocating level points to the companions you're leaving back at camp. In fact, you could even get creative and try giving them completely different skills and talents than what you're used to, and bring them out once in awhile just to see what it's like. Who knows? Maybe you'll find that your party has a dire need of someone with say, the Reaver Specialization or something? That's obviously just an example (and in hindsight, a rather poor one depending on your stance of that particular spec) but you get my point. Just when you think you've got a good thing going, it's nice to experiment just to make sure there's not something better out there.
But yes, you're right, there are certain quests that it's fun to bring certain people on, because of the extra dialogue you'll get to hear, or to get them appropriate approval/disapproval reactions. I mean, bringing people with conflicting views of morality might get annoying if you begin to get the feeling as though you can never please everyone. Final Verdict? Mix and Match. But only so that you're finding the team make-up that you're most comfortable with.

I play each game differently. I like to role play so the companions I bring alone fit whatever character it is. I play the game because I love the story. I like playing on easy I can bring whoever I want along with my characters because all fights go without me really having to worry about tactics and whatnot.
for instance I have a female Auducan who is a sword and board, but she is romancing Alistair so, i bring him along, and since I had her go to Orzammar first I have Ohgran along too (mainly because I've never heard his dialog in the other areas of the game because I usually do Orzammar last) and Leliana because I need her to open chests. so three warriors and a rogue. This was one of the only times I got through redcliffe without losing anyone in the big zombie fight.
I don't usually mix and match during a single game though. I pick the compainions I think the character would get along with them best.

i never bring alistair with me except redcliffe and his personal quest, always talk with him at camp though, you may miss stuff, i was a dual wielding warrior and my party consisted of me, sten, morrigan and leliana, now if i was a rogue i might take alistair to tank and draw away enemies for backstabs etc, since you are a tank, you dont need alistair

Well, one of the things that makes the game so replayable is that it feels quite different with different parties. I tens to pick different 'core' teams on each playthrough. The only one who's always in my party is Alistair, both for roleplaying reasons, and personal preferrence. He's the other Grey Warden, and from a game perspective, has just as much a stake in what you're doing as the warden. It doesn't make sense to me to leave him in camp, or that outside game mechanics, he'd stay there. Also, there's no character whose company I enjoy more. He just makes the game more fun for me. And outfitted/spec'd well, he's an awesome fighter--generally the last one standing in a tough fight. It doesn't matter if you're a warrior, too. I play my warden with virtually the same build, templar champion, and it works great. Havong two people who can dispel magic and smite can be a real lifesaver.

I usually end up with a set party each time. Part of the reason is that I just bring whoever my character would bring (usually who they get along with the best), and part of it is that if I take different NPCs each time it helps with the replaying.
I do switch it up a bit if I'm doing a quest specifically related to one character or another, as I'll usually bring that character then (it would feel odd elsewise).
It works just fine to play the game either way, though. It all comes down to your preference.

I like switching around, because most party members have cool banter (even Morrigan and Alistair, my least favorite). But there are some favorites, I take more often than others: Zevran is often in the group, Wynne (she becomes more realxed, the longer she travels with me :-) - no more preachings), Sten (love his one sentence answers) and Leliana. Sometimes I play two mages and two rogues (Zev, Leli, Wynne and me) - for some reason, I'm not good with figthers - they tend to die fast in my groups -, but I'm really great with rogues and mages, they nearly never die.
