I'm just curious if there's any way to alter the DAO dialogue system to allow icons, colored text, or any other way to differentiate dialogue options besides the "icons" that are actually just text (persuade and other skill checks use these "icons"). If there is, or there can be, that would be helpful to know.
Is it possible to color-code or otherwise mark dialogue options?

Not out of the box. It would require a UI mod as far as I know. It's possible, but trickier because you'd need to change the colour transformation on the movieclip text rather than just assign a text colour (and if that sounds like gibberish, it's because it's about Flash. Probably still sounds like gibberish, but I'm just saying there no easy way - it does that so it changes colour when you hover over a dialogue option.)
Icons should be possible again with a UI mod, but I don't think that toolset GDA for custom skills works in game (vs the toolset and even then I think it's still just text by the time it gets to the conversation UI), so you'd probably have to make a system where a text prefix gets interpreted as referring to a specific icon.
In other words, no easy way.
