Which is the better party member? Ohgren has more skills maxed out and can have to specilizations but Sten has a ton more strength then Ohgren does at the moment. Which is the better of the two?
Ohgren or Sten?

It's personal preference.
Sten really doesn't miss not having a second specialization. Just give him the berserker spec at 14 and cal it a day. It is nice that you can recruit him early enough, so that the game doesn't "auto level" him and he won't come with wasted attribute points. Just pour everything into strength from the moment you recruit him and he should have double the strength of Oghren when you get to that point.
I think Sten was intended to be the more offensive warrior, where Oghren will have more constitution, and would probably do better as a tank, or backup tank. Their approval stat bonuses also reflect this. Sten will get a +6 to strength with max approval, while Oghren will get a +6 to constitution.
However, I wouldn't let stats influence who you take with you. You may find Oghren to be more likeable, and he can easily replace Sten in the party if you wanted. I like having Oghren around in the Deep Roads for his dialogue when you first enter areas, and it's always funny seeing a heavily-armed dwarf kicking butt on the frontlines of battle.

You can't really go wrong either way. The game doesn't punish you that much for not being "optimal". If you give Oghren a few more levels to boost his strength, he'll be able to meet the strength requirements, though it does suck that Oghren usually comes with less than 40 strength while Sten will probably have around 75 by that point if you put the majority of his attributes into strength.
You could also go after "A Paragon of Her Kind" right after Lothering to get Oghren sooner, but many might struggle as Orzammar is considered the toughest of the four ally quests, especially fighting in the deep roads.

Oghren can have 2 specs, which is a plus.
Also his natural dwarven spell resistance helps against the mages.
If you play orzamarr later (level 14+) he comes with all beserker powers, including final strike, and a moderate willpower, so he can be quite very useful =)

I generally do Orzammar last and by that point find that Oghren is a good replacement for Sten. Sten hits like a tonne of bricks, but even with the toughest armour he's still quite fragile. So unless you've sunk points into constitution with him (in which case Oghren still has the upper hand by having two specs), are a healer mage, take Wynne with you or just have a pile of health pots gathering dust, Oghren is probably the better option. But there's not a lot in it. If you prefer either one to have around for conversation/banter, go with them.

Yes, Sten works best when paired with someone like Alistair who can take the hits while Sten dishes out the damage. Disengage helps keep Sten alive too.
You do get Sten around lv 8, which does give you plenty of time to boost his defenses, if you really wanted to keep him around. Usually by the time I recruit Oghren, Sten's somewhat grumpy attitude has worn on me enough to want to switch him for Oghren.

"That's a lot of nipples..."
stuff like that is reason enough to choose Oghren over crumpy Sten.
