Damn, the final boss was both stupid and dissapointing beyond compare. I just told myself; "ok, in order to keep enjoying I have to crap out the crap I just saw and forget about it for the rest of my life".
It worked till today, I accidentally saw the terminator, and then the flashback occured.
NOOOOO!!!! HOW COULD THEY PUT SOMETHING SO LAME IN MY MASS EFFECT!!!!
But am I the only one with that opinion? And how could they have done this better?

Reapers speak of themselves as the pinnacle of evolution. Why do they adopt a primitive body plan? Even if they assemble DNA and organic material from the organisms they harvested, it doesnt mean that it has to look like a human. And since when can a goo of cells and DNA produce metal?
A human body is absolutly not efficient for a space-ship.
I just cant imagine at what point the usually very creative dev team sat down and said; now lets mop up this game with a big metal terminator that shoots lasers from its eyes. That will certainly please everyone!

Either way, I suppose you could argue that they adapt any race that successfully stands upto them-- the kind of idea that this race must be special to be able to kill a Reaper, so they try to mimic it (kind of like how Cerb. was saying Shep. was unique amongst humans, so they wanted HIM/HER back, not just someone like them).

Doubtful, if the Reapers only used species that have any sort of victory against them then they would never increase their numbers because their usual modus operandi has been to arrive straight at the Citadel, shutting down all Relays and Communications, after which what kind of a fight could any species offer?
Nope, we're stuck with Humans being 'more genetically diverse'. Joy.
As for the Reaper 'shell', I've seen that theory myself and it still doesn't make any sense to me. Why build a humanoid form only for it to then be encased in a ship where it can't move? Whats the point?
@OP Many of us felt exactly the same way you did when we first saw the Termireaper, by this point apathy has set in and we've just reluctantly accepted that we're stuck with it now and its likely to feature in ME:3.
The only theory that makes any sort of sense to me at all is that the Reapers were testing to see if Humanity was a viable option for making Reapers and that the Termireaper was just a sloppy job, that they didn't care about it and so only used the most basic of technology as a test and because of this it retained a 'humanoid' form. Hopefully in ME:3 we'll find that Reapers don't have that form but are simply built as a part of the ship itself.

The core of ME2 plot is Collectors abducting humans, you cannot change that. I would be much more happy with collectors creating an army of husks. I wouldn't need to suspend my disbelief in this case.

I think the new human Reaper was going to be outfitted in blue tights with a big letter S emblazoned on its chest, and would fly through space like Superman, crushing all before it and burning enemies with energy beams from its eyes.

An issue with many Bioware endbosses. RoboSpectre was hardly a challenge (and more annoying to me, had its behavior copy-pasted from Geth Hoppers. The HR at least behaved uniquely, even if that behavior wasn't the greatest.).

Mostly, a way to avoid adding a bunch more purely expostiory dialogue to a scene that was already exposition-heavy. I.e., a time-saving measure. Partly, I'd imagine, it was also an attempt to retain some mystery by letting us wonder exactly how the process works. I say this because EDI prefaces that statement with "The exact construction methods are unclear..."
