Depends on what each class plays like, if they're roughly similar to their ME2 counterparts then mine will be as follows:
Vanguard > Adept > Engineer > Infiltrator > Sentinel > Soldier

My initial 6-class ME1 playthrough went:
Male Soldier (mostly paragon) > Female Adept (paragon) > Male Engineer (Renegade) > Female Vanguard (Paragade) > Male Sentinel (Paragon) > Female Infiltrator (Renegade)
My initial 6-class ME2 playthrough went (I think):
Male Soldier (mostly paragon) > Female Infiltrator (Renegade) > Male Sentinel (Paragon) >
Female Adept (paragon) > Male Engineer (Renegade) > Female Vanguard (Paragade)
For ME3, I think my initial 6-class playthrough will go something like the following:
Male Soldier > Female Adept > Male Engineer > Female Infiltrator > Female Vanguard > Male Sentinel

Yeah, I guess that's true, and most peoples first play-through was probably soldier-Shep to try out new classes later.

I only have a Soldier playthrough ready, HA. So by default...yeah. I have an Engineer playthrough that's almost ready, that will perhaps be on dock next. And then I need to get another playthrough ready that romances Ashley, probably, and a dude Shepared one that romances Liara, and so on and so forth. So much to do, so little time.

So far I've only tried engineer and sentinel, so if I had to choose today it would be a sentinel. I'm going to try vanguard and adept before ME3 is released, so it might change.

I will play soldier, i been importing my mass effect since mass effect 1 so i think I should leave it just soldier, plus I love using all weapons and the adrine rush =p

Its got to be a male all paragon soldier shephard. The same one from ME1 to ME2. I love being a hero, and I always wanted to a war hero, and the perfect soldier, except they better fix the soldier in ME3. I want raw power like in ME1, not this pretty little BS like in ME2. I've played as all classes, but after the soldier, it would have to be the vanguard. My shotgun is my second best friend, right behind my assault rifle.

I think I'll go soldier first, like I did ME1 & ME2; a sound tactic, no need to fix what ain't broke right? Not to mention, being a soldier first will let me see pretty much all the guns in the game on my first playthroughs.
I've got Male & Female Soldier Shepards (Renegade and Paragon respectively) so the playthroughs will still be different in terms of decisions.
After that I have a variety of Infiltrators, Engineers and Sentinels in different Paragon/Renegade combinations, so I can explore the different levels of gameplay.

My femgineer Alexandria. She was my first character in ME1, my first import in ME2 and will be first in ME3.
I have one save of every class but my engineer is my most favorite. If I could only import one save, it would be that one. I'm seemingly in the minority with my preference for the engineer class but I think it's lots of fun.. and she's a redhead so that's instant win IMO.

Either my sentinel or soldier.
Sentinel was my original from ME1 and into ME2, so there's the nostalgia thing, but I have to admit that I found soldier combat to be more engaging. Laying into an opponent with the revenant felt a lot more visceral than using heavy warp yet again.
