I wouldn't have thought Sebastian would feel it necessary to specify that this was the sort of marriage where you don't sleep with other people. That's generally understood as part of the deal. Unless you were proposing to Isabela, maybe.

Yeah, sort of, that's what they say anyway.....  

The reason nuns and priests take the vow is because that's just what you're supposed to do now as it's the tradition.  It's not like all of them came up with the idea on their own and did it for themself.  But where did that idea originate from?  Well, the answer is money.  If you had children, would you leave you possessions/savings to the church?  No, you'd leave them to your children.  Ugly truth, but indeed truth.

I always thought he took the vow (or was forced to take it) as a repentance for his male Isabela lifestyle.

I think it's normal for people entering the Chantry to take such vows.  Leliana's forbidden fruit conversation in Origins gives that impression, anyway.

An Andrestean priest is only female; they are considered married to the Maker. Lay brothers and sisters take no such vows and neither do Templars.

But that's a different metaphor. This is fruit. Cherries are decadently and richly strong and sweet. Just like Leliana.
